The Story:
Do you remember those big school or family functions when you would see that glorious selection of Costco Muffins? Usually the parents would cut them in half or even in quarters, but that didn’t dare stop you from taking more than the equivalent of one huge muffin.
If I remember correctly, those muffins average over 500 calories a pop… and by pop I mean muffin. This copycat recipe provides less calories and smaller portions that probably fit all of our lifestyles better.
Seriously, these are so good, and they look beautiful when they come out of the oven.
Ingredients:
3 eggs
½ cup milk
½ cup oil
¼ cup water
1 teaspoon vanilla
1 devil’s food cake mix
1 (3.9 oz) package instant chocolate pudding
1 teaspoon cinnamon
¾ cup sour cream
1 ½ cups semisweet chocolate chips
Directions
1. Preheat oven to 375 degrees and line muffins tins with liners.
2. In a large bowl, lightly beat eggs.
3. Add oil, milk, water, vanilla, and beat again.
4. Stir in sour cream, and then add cake mix, pudding mix and cinnamon. Do not over mix.
5. Stir in chocolate chips and fill muffin liners 3/4 full.
6. Bake for 15-20 minutes or until a toothpick comes out clean OR the tops spring back.
7. Remove immediately from muffins tins and let cool for 10 minutes, then store in n airtight container. If the container steams because they are not fully cooled, don’t freak out, that just means they will not dry out.

Great blog! Just looked it up, the Costco chocolate muffins actually have 690 calories each. If you buy the Apple Crumb muffins, they are 920 calories each! I am definitely interested in your recipe, it looks great. And likely a better option for us chocolate lovers. Keep up the good work!

Sometimes it is just your oven sadly. I have this issue too sometimes being at college with old apartment ovens. But make sure there is enough baking powder in the recipe and if you take the muffins/cupcakes out too soon, then will fall flat. Good luck!

A batter with a thicker consistency tends to produce rounder tops on muffins and cupcakes. And, avoid opening your oven until baking is at least 90% compleat. Having the right type and amount of leaving is also important, as well as your oven. Other factors are harder to control like elevation, and weather/humidity.

Recipes that include eggs the amount you beat the eggs can affect the shape as well. Over beaten and you get a peak,under beaten and it’s flat.

Hi, answering the flat muffin thing….. if you’re using a mix, chances are it has been sitting in a store room and then on a shelf for a good amount of time, I have always found that mixing my box mixes for 2 or 3 minutes longer than called for helps my cakes and muffins to fluff up considerably more than when I follow the directions.

Hi, I made a variation of these muffins today and they are actually better than the Costco muffins. I thought I had all of the ingredients however I was mistaken. So to improvise, I used a box of german chocolate cake mix and added a HEAPING tablespoon of cocoa powder. I also used Hersey’s chocolate pudding mix and forgot to add the cinnamon. I can’t wait to try your actually version. Thank you for sharing.

Have you tried substituting the chocolate cake mix/pudding for white/vanilla and substituting the chocolate chips for blueberries? My two favorite Costco muffins are the chocolate and the blueberry!

My 12 year old was asking to buy choc chip muffins at Costco recently and I didn’t want to buy 12. Looked on line and found this recipe!
YUM! These are sooo good. I made some today and my kids (ages 10 and 12) were so excited!
I had 12 without extra choc chips on top and 12 with extra on top. Guess which ones went first??
I bought Betty Crocker Devil’s Food cake mix and Jello brand choc pudding mix 3.9 oz box. Will make again soon!
