Can’t get enough red velvet? Then this is the cupcake for you! Delicious red velvet cake topped with red velvet cake batter cream cheese frosting. Every day is Valentine’s Day with this cupcake in the kitchen.
The Story:
My question: “Girls watch romantic comedies and bash on all their ex boyfriends. But what do guys do on Valentine’s Day if they don’t have dates?”
His answer: “We sit at home watching ESPN and talk about how awesome we are.”
Now I know.
Double Red Velvet Cupcakes
Ingredients
Red Velvet Cake:
- 1 box Red Velvet Cake Mix
- 3 eggs
- 1/2 C. oil
- 1 C. sour cream
- 1/3 C. buttermilk or milk
- 2 tsp. vanilla extract
Red Velvet Cake Batter Frosting:
- 1/2 C. butter softened
- 8 oz. cream cheese or 1/2 C. butter, softened
- 2 tsp. vanilla extract
- 1/2 C. Red Velvet Cake Mix dry powder, sifted to remove lumps
- 2 Tbsp. milk
- 3-4 C. powdered sugar as needed
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix into a small bowl and set aside.

3. In a large bowl, combine eggs, oil, sour cream buttermilk and vanilla extract until smooth.

4. Add cake mix and stir.

5. Fill cupcake liners 3/4 full and bake for 16-20 minutes or until an inserted knife comes out clean.

6. Red Velvet Cake Batter Frosting: Beat butter and cream cheese until smooth. Add vanilla extract, red velvet cake mix and milk and beat again. Add in powdered sugar a little at a time until you reach your desired consistency.

7. Pipe onto cooled cupcakes and top with sprinkles.

YES!!! This is why I do cake mixes, because gluten free cake mixes work with the recipes too! If you can’t find a red velvet GF mix, use a white mix, add a little cocoa and a lot of red dye!

It was be an exact substitution because then you have to decide if you want to make a RV cake batter frosting (which is what is is using the mix) or if you just want a RV frosting. The latter is easier, so add just a little bit of cocoa powder and lots of red dye!
