Pumpkin Swirl Cupcakes for Halloween

Ingredients

  • CAKE:
  • 1 box Devil's Food Cake Mix I prefer pillsbury
  • 3 eggs
  • 1/2 C. melted butter or oil
  • 1 C. sour cream
  • 1/2 C. milk
  • FROSTING:
  • 1 C. butter room temperature
  • 2 1/2 C. powdered sugar
  • 2 tsp. vanilla extract
  • orange food dye
  • DECORATIONS:
  • Watermelon Air Heads
  • Tootsie Rolls

Instructions

  1. 1. Preheat oven to 350 degrees and line cupcake pans with cupcake liners.
  2. 2. Combine cake mix, eggs, melted butter, sour cream and milk until smooth. Fill cupcake liners 3/4 full and bake for 18-20 minutes or until an inserted knife comes out clean.
  3. 3. Let cool.
  4. 4. Frosting: Beat butter and powdered sugar. If it's too thick, add a little milk or if it's too thin add more powdered sugar. Add vanilla and dye until you get the right pumpkiny color!
  5. 5. Pipe frosting onto cupcakes and then mold a piece of tootsie roll into a "stem" and part of a watermelon Air Head into a "vine." I have a video on making these, so watch that above!
