The Story:
Hot Chocolate Truffles
Ingredients
- 2 3/4 cups semi-sweet chocolate chips
- 1 cup heavy cream
- 1 tablespoon sugar
- ¼ teaspoon salt
- 2 teaspoons vanilla extract
cocoa powder, crushed candy canes, mini chocolate chips for rolling
Instructions

1. Place all ingredients in a pot and melt together on low heat until smooth. Stir constantly.

2. Let cool in the fridge until stiff enough to scoop.

3. Make small scoops, about 2 Tablespoons each. And place them in the freezer for and hour.

4. Remove scoops, roll into balls.

5. Roll in your choice of decoration. Crushed candy cane, cocoa, cinnamon, mini marshmallows. (If you try the mini marshmallows, you really have to push the marshmallows into the chocolate balls.)

6. Wrap each ball in suran wrap and keep chilled until ready to use.

7. When ready, drop chocolate balls into 1 ½ cups of hot milk and stir!

Well, they do have cream in them. But you could make a batch, keep them on the kitchen counter for a few days and then try them as a test run.

Oooh, those are so pretty! I've actually never made truffles, but keep saying I want to. I should just do it! I think the mini marshmallow ones are incredibly cute, but I think I'd love the candy cane ones the most 😀

They are very rich, so they are mainly for melting in a drink. But I did just finish some fabulous truffles for eating, so that recipe will be up soon!

As a chronic pain patient, this is recipe that doesn’t seem to overpowering yet gets a lovely look at the end! Quick QUESTION: Can you double recipe? Or is it better with this kind of recipe to do these in their own batches so you know the flavor and such is there?

So, I tried the recipe, but I ran into a big time issue; the truffles were too soft, as in they didn’t hold their shape and would melt within five minutes of being out of freezer. I followed the recipe exactly as you suggested, any idea of what could have caused that issue?

I’m doing this recipie as I type–it seems you either need to set your freezer colder or wait more like an hour 30 minutes, stopping at the 45 minute mark to open up the insides, for it to fully freeze. Otherwise, I’ve gotten gloopy balls that stick to your hands. They are delicious, though.

I m curious if anybody knows how long these will keep in the frig? If I give them as gifts, I am thinking I should put a “use by” date. Also curious if they should be stored frozen and how well they hold up in the freezer?

It’s all about the cream! So if anything thing I would use the cream date found on the carton as the “use by” date, but it’s true, if you freeze them they will last longer! Though they shouldn’t be frozen when you drop them into your hot milk or else your hot chocolate won’t be that hot…. 🙂

Hi! I made up a batch of these on Monday night; let them cool in the refrigerator overnight; scooped out balls and put them in the freezer. After 2 days, the balls are still too soft to handle. Any ideas on what needs to be done to firm them up?
Please help! I wanted to use them for gifts.

I’m so sorry! That’s so weird, mine were soft but not too soft to where they lose their shape. Add more chocolate chips next time! That will for sure firm them up because it will change the ratio!

What a great holiday gift. I had to make these in mass for my neighbor gifts and I didn’t have much time with a 2 month old baby so I made a test batch where I doubled the recipe using only 1 1/3 c cream (2/3 c per 2 c of chocolate chips) and I poured it into an 8 x 8 pan lined with parchment paper. I used pressed mini marshmallows on top and put in the fridge overnight. I then cut them into 2 x 2 squares. It was super easy and a great gift! I’m going to make more for the neighbors now!!! Thanks for the recipe!!! When my son gets older, I’m sure he’ll love rolling them into balls… But for now, it’s hot chocolate truffle squares :).

Do you really have to wrap each ball individually or can i put them in a tupperware? Do they keep their shape at room temperature?

Oh you can totally put them in a tupperware! They keep their shape a little better in the fridge but room temp is fine!

What a shame, and should have read comments before I made. The same issue that a lot of people had I did as well. These are too loose, and don’t keep their ball shape. Recipe is off, and needs to be adjusted. Less cream I would assume. Anyway, happy holidays!! Sadly off to buy some truffles now:(

Was so excited to make these to add to my Christmas goodie baskets. Having some of the same issues as others I have seen. I put it in the refrigerator for a couple hours to cool. Then dropped the scoops onto a cookie sheet covered in parchment paper. They immediately started turning into puddles of chocolate. Put in the freezer for an hour and took the puddles and rolled into balls and by the time I got to the last one they were turning back into puddles. So I shaped them quickly, and put in the freezer overnight, only to find them in flat puddles again. So bummed and hate to throw away all the dough that I made.

I made these this year for our family Christmas party, used the recipe exactly. The only thing I did different is I refrigerated over night before rolling them, and when I rolled them out I immediately rolled them in Cinnamon, crushed peppermints or marshmallows, then placed them in the fridge for a couple more hours before serving them at the party. They worked great and were the hit of the party!

How do you think they would fare be coated in candy melts? Or maybe rolled in crushed candy melts? Do you think they’d still melt? I’ve never worked with it before so I’m not sure how easy it melts. I found some candy cane and salted caramel candy melts that I think would be amazing with this!
