Cheesy Crash Potatoes

Ingredients

  • 2 lbs baby red potatos rinsed
  • 1/4 cup olive oil
  • 2 tsp dried or fresh rosemary
  • 2 tsp dried or fresh thyme
  • salt and pepper to taste
  • 3/4 cup finely grated parmesan cheese

Instructions

  1. Preheat oven to 450 degrees.

  2. Bring a pot of salted water to a boil and boil the potatoes for 20-25 minutes or until they are fork tender.

  3. Drain the potatoes and spread them evenly on a baking sheet. With a fork, crush the potatoes until they are partially mashed.

  4. Drizzle olive oil over potatoes. Sprinkle rosemary, thyme, salt, pepper, and cheese over potatoes.

  5. Bake for 20-25 minutes.
