Cinnamon Roasted Sweet Potatoes

  • 4 large sweet potatoes peeled, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 tbsp ground cinnamon
  • salt and pepper to taste


  1. Preheat oven to 400 degrees.

  2. In a large mixing bowl, combine all ingredients and toss so the sweet potatoes are evenly coated.

  3. Bake for 25-30 minutes or until tender.

  4. Remove from oven, transfer to serving dish. Enjoy!
