Apple Cookie Dough Cupcakes

Servings 24 -30 Cupcakes

Ingredients

Apple Cake:

  • 1 box White or Yellow Cake Mix
  • 2 teaspoons cinnamon or apple pie spice
  • 1 teaspoon baking powder
  • 2 cups peeled cored and chopped apples (I used Granny Smith)
  • 1 1/2 teaspoons lemon juice
  • 1/3 cup oil
  • 3 eggs
  • 3/4 cup buttermilk
  • 3/4 cup sour cream
  • 2 teaspoons vanilla extract

Cookie Dough Frosting:

  • 3/4 cup butter softened
  • 4 ounces cream cheese softened
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1/2 teaspoons salt
  • 2 teaspoons vanilla extract
  • 3-4 cups powdered sugar
  • milk if needed

Instructions

  1. 1. Preheat oven to 350 degrees and line pans with cupcake liners.
  2. 2. Sift cake mix, cinnamon and baking powder into a bowl and set aside.
  3. 3. Prepare apples and place in a separate bowl with lemon juice.
  4. 4. In a large bowl, gently whisk oil, eggs, buttermilk, sour cream and vanilla extract together.
  5. 5. Add cake mix and stir until smooth.
  6. 6. Fold in apple pieces.
  7. 7. Fill cupcake liners 3/4 full and bake for 15-20 minutes, or until and inserted knife comes out clean.
  8. 8. Cookie Dough Frosting: Beat butter, cream cheese and brown sugar for 2 minutes. In a separate bowl, sift flour and salt together. Add flour mixture to butter mixture. Add vanilla extract and slowly add powdered sugar until you reach your desired consistency. If the mixture seems too thick, add 1 tablespoon of milk and continue to beat. Use more milk if needed, but this will be a thicker frosting than normal.
  9. 9. Pipe buttercream onto cooled cupcakes and top with chocolate chips and slices of apple. Note: dip your apple slices in lemon juice to keep them from browning.
