Chocolate Lemon Cupcakes

Servings 20 -24 cupcakes

Ingredients

Cake

  • box devil's food cake mix
  • 3 eggs
  • 1/2 C. oil
  • 3/4 C. buttermilk
  • 1/2 C. plain yogurt or sour cream
  • 2 tsp. vanilla extract
  • 1 C. mini chocolate chips optional

Lemon Cream Frosting:

  • 1/2 C. butter softened
  • 8 oz. cream cheese softened
  • zest of 2 lemons
  • 1 tsp. lemon juice
  • 1 tsp. vanilla extract
  • 3-4 C. powdered sugar as needed

Instructions

  1. 1. Preheat oven to 350 degrees and line pans with cupcake liners.
  2. 2. Sift cake mix into a small bowl and set aside.
  3. 3. In a large bowl, combine eggs, oil, buttermilk, yogurt and vanilla extract until smooth.
  4. 4. Stir in cake mix.
  5. 5. Stir in chocolate chips.
  6. 6. Fill cupcake liners 3/4 full and bake for 17-22 minutes or until an inserted knife comes out clean.
  7. 7. Frosting: Beat butter, cream cheese and lemon zest until smooth. Scrape down bowl as needed. Add lemon juice and vanilla extract and slowly add in powdered sugar until you reach your desired consistency.
  8. 8. Pipe onto cooled cupcakes and top with sprinkles or chocolates.
