Butterfinger Cookies

Servings 2 dozen

Ingredients

  • 8 Tbsp. butter
  • 6 Tbsp. peanut butter creamy (crunchy will work though)
  • 2 C. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 C. brown sugar packed
  • 1/2 C. sugar
  • 1 egg + 1 egg yolk
  • 2 tsp. vanilla extract
  • 1/2 C. mini chocolate chips
  • 8-10 mini Butterfingers roughly chopped

Instructions

  1. 1. Preheat oven to 325 degrees and line cookie sheets with parchment paper.
  2. 2. In a microwave proof bowl. melt butter and peanut butter together. Stir until smooth and then set in the fridge (or freezer for a shorter period of time) to let cool.
  3. 3. In a large bowl, combine flour, baking soda and salt together.
  4. 4. In the bowl of a stand mixer, beat your peanut butter/butter with brown sugar and sugar for 2 minutes.
  5. 5. Add in the egg and egg yolk and vanilla extract and mix until smooth. Scrape down the sides of the bowl as needed.
  6. 6. On slow, blend in the flour/baking soda/salt. Don't over mix.
  7. 7. Stir in chocolate chips and Butterfingers .
  8. 8. Form dough balls about the size of a golf ball and bake for 9-11 minutes. Careful not to over bake!
