Chocolate Strawberry Cupcakes

Ingredients

Chocolate Strawberry Cake:

  • 1 box devil's food cake mix
  • 3 eggs
  • 1/2 C. oil
  • 1/2 C. Tillamook sour cream
  • 1/3 C. milk
  • 1/2 C. strawberry puree place berries in a blender and blend
  • 2 tsp. vanilla extract

Chocolate Sour Cream Frosting:

  • 1 C. butter softened
  • 2 tsp. vanilla extract
  • 1/2 C. unsweetened cocoa powder
  • 1/2 C. sour cream
  • 3-4 C. powdered sugar

Fresh Strawberries for decoration

Instructions

  1. 1. Preheat oven to 350 degrees and line pans with cupcake liners.
  2. 2. Sift cake mix into a small bowl to remove any lumps and set aside.
  3. 3. In a large bowl, combine eggs, oil, sour cream, milk, strawberry puree, and vanilla extract.
  4. 4. Stir in cake mix.
  5. 5. Fill cupcake liners 3/4 full and bake for 17-22 minute or until an inserted knife comes out clean.
  6. 6. Chocolate Sour Cream Frosting: Beat butter until smooth. Add vanilla extract and cocoa powder and beat again. Add sour cream and 2 cups powdered sugar. Beat and then continue to add in more powdered sugar to reach your desired consistency.
  7. 6. Frost cooled cupcakes and top with a fresh strawberry.
