Oreo Funfetti Cupcakes

Ingredients

  • CAKE: Scratch Version
  • 1 3/4 C. cake flour
  • 1 1/4 C. flour
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 3/4 C. sugar
  • 1 C. butter room temperature
  • 4 eggs room temperature
  • 2 1/2 tsp. vanilla extract
  • 1 C. milk whole or buttermilk is best
  • 1/3 C. sprinkles
  • CAKE MIX VERSION:
  • 1 box white cake mix
  • 3 eggs
  • 1/3 C. melted butter
  • 1 C. sour cream
  • 1/2 C. milk or buttermilk
  • 1/4 C. sprinkles
  • OREO BUTTERCREAM:
  • 8-10 oreos finely crushed
  • 1/2 C. unsalted butter room temperature
  • 8 oz. cream cheese
  • 2 tsp. vanilla extract
  • 3-4 C. powdered sugar
  • 24 extra Oreos for decoration

Instructions

  1. 1. Preheat oven to 350 degrees and line pans with cupcake liners. (Optional: you can place an Oreo at the bottom of each cupcake liner and then fill with batter on top.)
  2. 2. (Scratch Version) Sift cake flour, flour, baking powder and salt together in a bowl and set aside.
  3. 3. Combine sugar and butter ina stand mixer and beat until fluffy. Scrape down the sides of the bowl as needed. Add in eggs one by one and then add vanilla extract.
  4. 4. Add about half the dry ingredients to the sugar/egg mixture and then add in your milk. Add in the remaining half of dry ingredients and the sprinkles and mix until incorporated but try not to over mix.
  5. 5. Fill cupcake liners 2/3 full and bake for 15-20 minutes or until an inserted toothpick comes out clean.
  6. 6. (Cake Mix Version) Combine cake mix, eggs, melted butter, sour cream and milk until smooth. Stir in sprinkles and fill cupcake liners 3/4. Bake for 15-20 minutes or until an inserted toothpick coms out clean.
  7. 7. Oreo Buttercream: Finley crush your Oreos using a food processor, blender or rolling pin. If you don't plan on piping your cupcakes then larger pieces work just fine! In a stand mixer, beat butter and cream cheese until smooth. Add vanilla extract and slowly add in powdered sugar until you reach your desired consistency. If it gets too thick, add a splash of milk. Fold in crushed Oreo pieces and then frost cooled cupcakes!
