BBQ Chicken Soup


  • Olive oil
  • 1 yellow onion chopped
  • 3 cloves garlic minced
  • 2 1/2 C. cooked chicken shredded
  • 1 15 oz can fire roasted tomatoes
  • 2 15 oz cans pinto beans, drained and rinsed
  • 1 1/2 C. frozen or canned corn
  • 32 oz. chicken broth
  • 2/3 C. BBQ sauce
  • 1 Tbsp. BBQ spice rub
  • salt and pepper to taste


  1. 1. Drizzle enough olive oil to coat the bottom of a large pot and place over medium heat. Add chopped onion and sauté until soft. Add garlic and cook for a few more minutes. Stir in chicken, tomatoes, beans, corn and chicken broth. Before it boils start to add bbq sauce a little at a time, taste as you go! Then bring to a boil and let cook for 5 minutes. Remove from heat and serve.
