You know I love doctoring up a cake mix to make delicious treats! Well this time it’s my favorite classic combo… yellow cake and rich chocolate frosting. And after you throw some sprinkles on top, it looks like a party! Plus, these adorable polka-dot liners from Sweets & Treats don’t hurt 🙂
The other day I made fun little Birthday Bite Cookies so I guess I’m on a bit of a “birthday” kick… though it’s not my birthday I promise! I guess I’ve just felt like celebrating with the launch of my new cookbook and the start of summer!
I know I’ve been slacking on “stories” and Saturday posts but things have been really busy outside the kitchen with family in town, getting another job and other things! And it’s hard to tell boy rants when things are going well in the “boy” department, so I guess that’s good for me… but gives me no good stuff for the blog!

Birthday Cupcakes
Ingredients
Yellow Cake:
- 1 Box Yellow Cake Mix
- 3 eggs
- 1/3 C. melted butter slightly cooled (or oil)
- 1/2 C. sour cream
- 3/4 C. buttermilk
- 2 tsp. vanilla extract
Chocolate Frosting:
- 1 C. butter softened
- 1/2 C. unsweetened cocoa powder
- 2 Tbsp. milk more if needed
- 2 tsp. vanilla extract
- 2-3 C. powdered sugar
Sprinkles for decoration
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix into a small bowl and set aside.

3. In a large bowl, combine eggs, butter, sour cream, buttermilk and vanilla extract until smooth.

4. Stir in cake mix.

5. Fill cupcake liners 3/4 full and bake for 15-20 minutes or until an inserted knife comes out clean.

6. Let cool.

7. Chocolate Frosting: Beat butter. Add cocoa powder, milk and vanilla and beat again. Slowly add in powdered sugar until you reach your desired consistency. Add in more milk as needed.

8. Pipe onto cooled cupcakes and top with sprinkles!

Oh yes! Just adjust the baking time for the thickness of the cake!

Nope! But i will chill your batter so they may need 2 or 3 extra minutes in the oven!

These cupcakes were really good! I don’t usually like frosting, but this frosting was amazing. My dad said it was the best cupcake he had ever tasted.
