Texas Sheet Cake Cookies

Your favorite sheet cake turned into a cookies! These Texas Sheet Cake cookies melt in your mouth! Yum!

Ingredients

Texas Sheet Cake Cookies

  • 1/2 cup butter, unsalted room temperature
  • 1/3 cup sugar
  • 1 egg room temperature
  • 2 tsp. vanilla extract
  • 1 1/3 cup flour, all purpose
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup chocolate chips, melted

Icing

  • 1/2 cup butter, unsalted
  • 3 Tbsp. milk
  • 2 Tbsp. cocoa powder, unsweetened
  • 2 1/2 cups powdered sugar

Instructions

  1. Preheat oven to 350 degrees and line cookies sheets with parchment paper.

  2. Using a stand mixer, beat butter and sugar for 3 minutes.  Scrape down the sides of the bowl frequently to make sure everything is evenly mixed.  

  3. Add egg and vanilla. (To get a room temperature egg fast, place cold egg in a bowl of warm-hot water for 3 minutes.) Scrape down the sides of the bowl and mix again.

  4. In a separate bowl whisk together flour, baking powder and salt.  Add dry ingredients to wet and mix until BARELY combined.  

  5. Pour in melted chocolate chips and mix until combined.  

  6. Make dough balls roughly the size of a golf ball and place on cookie sheets.  Bake for 7-8 minutes, they will still look very soft but they will firm as they cool. 

  7. Icing: Place butter, milk and cocoa powder in a small sauce pan and stir until melted. Pour into a medium bowl with powdered sugar and whisk until smooth.  Let cool for 5 minutes and then pour over cooled cookies.  I left my cookies on a cooling rack and let the extra icing drip off to a cookie sheet. Top with strawberries, raspberries, cherries or sprinkles!
