I don’t know about you but I have been in love with Texas Sheet Cake since the first time I tried it! There’s just something magical about the soft, fluffy cake with the gooey frosting that melts into it. My mother in law made some of these Texas Sheet Cake Cookies over Thanksgiving, and by “some” I mean 6 dozen for 8 people!! Well, they were a huge hit so I knew I needed to whip up a batch myself and share with all of you! They’re perfectly soft and topped with the same frosting as the cake! Because Valentine’s Day is just around the corner I added a pop of red with a strawberry! You could use cherries, raspberries, sprinkles or nothing at all to top yours with.
Texas Sheet Cake Cookie Recipe
This recipe is super easy to make! Sometimes when you make a chocolate dessert it includes all types of bakers chocolate being melted down and most people don’t have that on hand, but this recipe just uses melted chocolate chips to get that intense chocolate flavor! Baking Tip: Whenever I need to melt chocolate I use a pyrex measuring cup! Pyrex dishes are microwave safe and evenly distribute heat so you won’t burn your chocolate! Sometimes using mugs in the microwave can be tricky because they tend to have “hot spots” that heat up faster.
I used my mother in law’s cute hot pink mixer to make these! So fun!
If you don’t use parchment paper when baking, you need to! It’s a serious game changer. Your cookies come out with smooth bottoms, never stick and you never have to clean your baking sheets! Plus, you can actually reuse the parchment paper! Get some at Costco and you’ll probably never have to buy it again for the rest of your life!
It took all my strength to not eat a cookie until after I photographed them!

Texas Sheet Cake Cookies

Ingredients
Texas Sheet Cake Cookies
- 1/2 cup butter, unsalted room temperature
- 1/3 cup sugar
- 1 egg room temperature
- 2 tsp. vanilla extract
- 1 1/3 cup flour, all purpose
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1/2 cup chocolate chips, melted
Icing
- 1/2 cup butter, unsalted
- 3 Tbsp. milk
- 2 Tbsp. cocoa powder, unsweetened
- 2 1/2 cups powdered sugar
Instructions

Preheat oven to 350 degrees and line cookies sheets with parchment paper.

Using a stand mixer, beat butter and sugar for 3 minutes. Scrape down the sides of the bowl frequently to make sure everything is evenly mixed.

Add egg and vanilla. (To get a room temperature egg fast, place cold egg in a bowl of warm-hot water for 3 minutes.) Scrape down the sides of the bowl and mix again.

In a separate bowl whisk together flour, baking powder and salt. Add dry ingredients to wet and mix until BARELY combined.

Pour in melted chocolate chips and mix until combined.

Make dough balls roughly the size of a golf ball and place on cookie sheets. Bake for 7-8 minutes, they will still look very soft but they will firm as they cool.

Icing: Place butter, milk and cocoa powder in a small sauce pan and stir until melted. Pour into a medium bowl with powdered sugar and whisk until smooth. Let cool for 5 minutes and then pour over cooled cookies. I left my cookies on a cooling rack and let the extra icing drip off to a cookie sheet. Top with strawberries, raspberries, cherries or sprinkles!
