Double Red Velvet Cupcakes

Ingredients

Red Velvet Cake:

  • 1 box Red Velvet Cake Mix
  • 3 eggs
  • 1/2 C. oil
  • 1 C. sour cream
  • 1/3 C. buttermilk or milk
  • 2 tsp. vanilla extract

Red Velvet Cake Batter Frosting:

  • 1/2 C. butter softened
  • 8 oz. cream cheese or 1/2 C. butter, softened
  • 2 tsp. vanilla extract
  • 1/2 C. Red Velvet Cake Mix dry powder, sifted to remove lumps
  • 2 Tbsp. milk
  • 3-4 C. powdered sugar as needed

Instructions

  1. 1. Preheat oven to 350 degrees and line pans with cupcake liners.
  2. 2. Sift cake mix into a small bowl and set aside.
  3. 3. In a large bowl, combine eggs, oil, sour cream buttermilk and vanilla extract until smooth.
  4. 4. Add cake mix and stir.
  5. 5. Fill cupcake liners 3/4 full and bake for 16-20 minutes or until an inserted knife comes out clean.
  6. 6. Red Velvet Cake Batter Frosting: Beat butter and cream cheese until smooth. Add vanilla extract, red velvet cake mix and milk and beat again. Add in powdered sugar a little at a time until you reach your desired consistency.
  7. 7. Pipe onto cooled cupcakes and top with sprinkles.
