Easy Peazy Pumpkin Cupcakes

Ingredients

  • PUMPKIN CAKE:
  • 1 box yellow cake mix or spice cake mix and disregard extra spices
  • 15 oz. pumpkin puree
  • 3 eggs
  • 1/3 C. oil
  • 1/2 C. milk
  • 1 Tbsp. pumpkin pie spice or cinnamon if that's all you have
  • WHIPPED CREAM FROSTING:
  • 1 pint whipped cream
  • 1 small pkg. instant pudding mix white chocolate or cheesecake is my favorite

Instructions

  1. 1. Preheat oven to 350 degrees and line pan with cupcake liners.
  2. 2. Combine all cake ingredients and stir until smooth.
  3. 3. Fill cupcake liners 3/4 full and bake for 15-20 minutes or until and inserted knife or toothpick comes out clean.
  4. 4. Let cool.
  5. 5. Using the whisk attachment on your stand mixer, beat whipping cream and instant pudding mix until stiff. Pipe out onto cooled cupcakes and top with sprinkles or crumbled cake!
