Has an ingredient ever started to take over your life? Started to control you? This week, I felt like applesauce was taking over my refrigerator.
I had two huge jars just taking up too much space. To get to my cottage cheese, I had to slide the jars over, and wriggle the cottage cheese between the two jars. To get to the jelly, I had to stretch my arm up and over the jars and squeeze the jelly through the area between the tops of the jars and the ceiling of the refrigerator. To get to the milk was a war. I had to take both of the applesauce jars out, take out the milk, and then restore the jars of applesauce to their dictatorship in the refrigerator.
I needed to oust the applesauce.
Applesauce Muffins
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon apple pie spice
1/2 teaspoon salt
2 eggs
2/3 cup brown sugar
1 1/4 cups applesauce
1 cup chopped apples, peeled
Topping:
¼ cup flour
3 tablespoons brown sugar
1 ½ tablespoons butter, softened
1 teaspoon cinnamon
OR
1/3 cup sugar
1 tablespoon cinnamon
Directions:
1. Preheat oven to 375 degrees.
2. Melt butter, then let cool for about 5 minutes.
3. Sift together flour, baking powder, baking soda, cinnamon, apple pie spice, and salt.
4. In a separate bowl, whisk eggs and brown sugar. Add melted butter, applesauce, and chopped apples.
5. Combine wet and dry ingredients, but do not over mix.
6. Fill greased muffins tins or paper liners ¾ full.
7. Prepare a topping if desired by mixing the listed ingredients.
8. Bake for 20 minutes or until an inserted toothpick comes out clean.
*I made my muffins using the brown sugar topping, the cinnamon sugar topping, and also left some plain. The brown sugar left a good crunch on top while the cinnamon sugar just left a good spice. Also, the next time I make these, I will probably thrown in some pecans to make them more hearty.

How would I substitute the apples + applesauce, for homemade applesauce I have? It's got a lot of sugar in it, and wouldn't want to over-due it.
You can use less sugar, but also, you will need to watch out for your consistency. The plain apples bring some structure, so you may need to also add some extra flour. Good luck!
I made these and they were absolutly wonderful. I did omit the chopped apples and substituted some oats and nuts to make them more hearty. I gave some to my neighbor who just had a baby and she said they were perfect for breakfast and wanted me to make her more. Thank you for sharing this recipe.~jen
Have you ever subbed out cinnamon for ginger in the applesauce muffins? I’ve been wanting to try this, but would hate to have to throw out a whole batch of muffins. Any suggestions?

Ha! Too funny. Just put some ginger in the last bit of batter and scoop that out and then try it and see if you like it.
