The Story:
Okay, I hate taking photos of orange cupcakes, they always turn out gross because the lighting is always horrible. But how cute are these? They are like little Orange Blossom Cupcakes.
I also have a great white cake mix recipe you can use if you don’t want to use a box mix.
Orange Blossom Cupcakes.
Ingredients
Vanilla Cake:
- 1 box white cake mix
- 2 eggs
- 2 egg whites
- 1/3 cup oil
- ¾ cup buttermilk
- ¾ cup sour cream
- 1 teaspoon vanilla
White Chocolate Ganache:
- ½ cup white chocolate chips
- 2-3 Tablespoons heavy cream
Orange Buttercream:
- 8 oz cream cheese softened
- ½ cup butter softened
- zest of 1 ½ oranges
- 3-4 cups powdered sugar
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. In a large bowl, gently combine eggs, egg whites and oil.

3. Add buttermilk, sour cream and vanilla. Mix.

4. Add cake mix (for easy mixing, sift in) and stir until combined.

5. Fill cupcake liners ¾ full and bake for 16-20 minutes or until an inserted knife comes out clean.

6. Once cupcakes are nearly cool, make ganache.

7. White Chocolate Ganache: Use a microwave or double boiler to heat white chocolate chips and heavy cream and stir until smooth. Be careful not to burn the white chocolate.

8. Dip the tops of the cupcake in the ganache.

9. Buttercream: Beat cream cheese, butter and zest until light and fluffy, it should take about 4 minutes. Slowly add powdered sugar until you reach your desired consistency. If you need to loosen the buttercream, add a tablespoon of orange juice.

10. Pipe onto cupcakes once the ganache has set and top with sprinkles. I used a 1M tip and used a rosette piping technique.

Really anxious to try these out, but before I do, I have a question regarding cake mix ingredients. Recipe calls for 2 eggs and 2 egg whites…do you mean 2 egg whites in ADDITION to 2 whole eggs (yolks and whites)?

Yes! Two whole eggs plus two eggs whites.

My best friend and I decided to give these cupcakes a go the other evening. We didn’t have a zester so we substituted the zest for orange extract. We also came across a cream cheese that was orange and cranberry flavor. With these two substitutions, the cupcakes turned out delightful. They only lasted a few hours in a room of starving firefighters =) Thanks so much for the great recipe.

I just made these this week and they’ve been a big hit! Great recipe! I added a couple ingredients to the cake to add some extra flavor and I’m really pleased about the results. Samantha, I don’t have a zester either, so I just used a fine grater.
