I don’t carve pumpkins around Halloween. I just make every form for pumpkin baked good possible and call it even.
A friend gave me half a can of Libby’s Pumpkin Pie Mix, so of course I couldn’t let it go to waste. But all of the recipes I found called for straight pumpkin puree. So I tweaked a few recipes I found and just crossed my fingers and hoped it would work.
It worked out quite well. This recipe is a definite keeper.
Pumpkin Chocolate Chip Cookies
Ingredients:
1 box yellow cake mix
15 oz Pumpkin Pie Mix
1 teaspoon pumpkin pie spice
1 teaspoon vanilla
Chocolate chips
Nuts (optional)
Directions:
1. Preheat oven to 350 degrees.
2. Mix all ingredients together.
3. Bake for about 15 minutes or until the tops are a little firm.
*You can use spice cake mix with normal pumpkin puree and it will also turn out fabulously. I used pecans because it was what I had on hand, but use whatever you like best.

May I suggest adding a maple icing on the pumpkin chocolate chip cookies. It is amazing! Just stir up a standard buttercream frosting and flavor with maple flavoring in place of vanilla. I think you'll really like it.
About how many cookies does this recipe yield, and how much of the chocolate chips do you put in?
The quantity depends on home big you make them. But about 24. I use about 1 3/4 cup chocolate chips. Good luck!
