The Story:
Did anyone actually make good money doing a lemonade stand? I remember sitting out in the blistering sun, fighting our little card table that kept collapsing and trying to find the right balance of cute and pathetic so people would stop and buy a drink or two. But I don’t remember any money actually being made.
Blackberry Lemonade Cupcakes
Ingredients
Lemonade Cake:
- 1 box white cake mix
- 3 eggs
- 1/3 C. oil
- zest of 2 lemons
- 1/4 C. lemon juice
- 1 tsp vanilla extract
- 3/4 C. milk
- 1/2 C. sour cream
Lemon Glaze:
- zest of half of a lemon
- 1/4 C. lemon juice
- 1 2/3 C. powdered sugar
Blackberry Buttercream:
- 1 C. butter softened
- 4-5 C. powdered suagr
- 1/4 C. blackberry puree blackberries thrown in the blender, blend, then run through a strainer to remove seeds
Extra blackberries for decoration
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix into a separate bowl and set aside.

3. In a large bowl combine eggs, oil, zest, lemon juice, vanilla, milk and sour cream until smooth.

4. Stir in cake mix.

5. Bake for 17-22 minutes or until an inserted knife comes out clean.

6. Glaze: Combine all ingredients in a bowl (using a whisk or fork is easiest).

7. Buttercream: Beat butter until smooth. Add enough powdered sugar to make the frosting stiff, then slowly add in blackberry puree 1 Tablespoon at a time until you reach your desired consistency.

8. Spoon glaze over cooled cupcakes and let set.

9. When glaze is firm, pipe frosting on top and finish with a fresh blackberry.
These look amazing! Can I use lemon cake mix in liue of the white, and if so, do I need to change anything else?

Yes you can use a lemon cake mix! You can keep everything else the same, but you may want to use less lemon juice/zest since the cake mix will have lemon flavor
These cupcakes are darling, Lizzy! Oh, and the answer is no… I think the money my friends and I made at lemonade stands disappeared into the hands of the cashier at the corner drug store. I remember eating my weight in Pixie Stix 🙂
By the way, your piping is GORGEOUS! What tip did you use for these?
I used a Wilton 2D tip, but sometimes I like to use a knife to spread the little spokes in the tip a little bit more.

Believe it or not but I made quite a bit of money off a lemonade stand during my mom’s yard sale! It helped but a few extra toys. 😉 The best idea was my ice cream stand..(and no it didn’t melt 🙂
I never made money from a lemonade stand. I just remember being sticky and not wanting to clean up the mess.

Can egg whites be substituded in the cake mix?

These are absolutely gorgeous! I just have a quick question, your instructions say to “stir” in the dry ingredients. Does that mean stir the dry ingredients in by hand or should I use a hand/stand mixer? And if I can use a mixer, about how long should I mix the batter? I guess that was technically two questions, lol. Thanks!
I always mix my batter by hand. Just stir or mix until things are incorporated. If you beat a lot of air into your cakes, they can turn out more dry.

A couple questions…
How many cupcakes does the recipe produce?
And does that say 4 to 5 cups of powdered sugar?? Is that to make up for the extra liquid from the berries?

It makes 20-24 cupcakes. And the powdered sugar is there to thicken the frosting, if you don’t add powdered sugar you will have a creamy soup.

I just took the cupcakes out of the oven and they deflated. What did I do wrong? They flavor is good but they are a little chewy.
It can depend on the cake mix you use, but my suggestion would also be to bake them a little longer!
Is it salted or unsalted butter?
I prefer unsalted butter!

I like to make things from scratch, so instead of using a box mix could I use maybe a homemade vanilla cake recipe a omit the eggs and oil?

I made these this week and they were a big hit! I just love the fresh lemon juice and zest in the cake instead of using a lemon cake mix; and the glaze was perfect with the blackberry icing…..not to mention that they looked beautiful with the large blackberry on top. For all your cupcake recipes, wherever it says sour cream can that always be replaced with plain yogurt? or is it only for select recipes. Also, will it make a difference if you use soy/almond/lactose free milk instead of the regular 2% milk?
Yes, you can always replace it for yogurt! You can use vanilla yogurt if that’s easier or even Greek!

I made these for my church conference and they were a huge hit :). I made the error of making the frosting first and then adding most of the blackberry puree at the same time. The frosting didn’t have much of a blackberry taste and I am wondering if that is why? It was a beautiful color but I had to keep adding more sugar to regain the stiffness needed to frost. Naturally, when I did this, the flavor became muted. Any suggestions? Thank you again for this wonderful recipe!!
