The BEST Cake Mix Mississippi Cookies
Mississippi Mud Cookies have always been a favorite of mine. There’s just something so irresistible about chocolate, marshmallow and walnuts piled high onto the same dessert. Well this summer I just had to make a fun and easy cake mix recipe fo get my fix and WOW did this recipe deliver! I had to take these to my neighbors right after I photographed them because I had already snuck 4! Whoops! They’re just sooooo tasty. The rich chocolate icing, fluffy marshmallow frosting, nuts and soft, brownie-like cookie. These are PERFECT for back to school baking! Plus, these keep in the refrigerator really well! So bake up a batch in the morning or the night before and your kiddos can have one after they get home from school.

Chocolate Marshmallow Cookies
You can make these Cake Mix Mississippi Mud Cookies with or without the walnuts. I am a huge nut fan but I know plenty of you out there would prefer them to be plain. If you want to really jazz these up, you can add sprinkles instead of nuts and they will look perfect for any party! Let’s talk more about this cake mix cookie recipe though because I do have a secret to making them perfect.

The Secret to Making THE BEST Cake Mix Cookies
My secret? It’s all about the brand of cake mix you use! I always, always, always use Pillsbury Devil’s Food Cake Mix for my cake mix cookies because they don’t flatten out! When I try using Betty Crocker or Duncan Hines they always bake super flat and then I’m stuck with sad looking cookies. Pillsbury cake mix always leaves my cookies nice and rounded. Sometimes they’re actually too tall so I gently press them flatter after baking with my fingers! How to make Mississippi Mud Cookies
After you bake up the cookies, let them cool and then top them with your marshmallow frosting. I like to use the marshmallow to leave a little raised edge around the outside so that when I spoon on my chocolate icing is stays in a pool in the middle! Before the chocolate icing sets, top the cookies with your nuts or sprinkles! Yum, these Cake Mix Mississippi Cookies are calling my name!

Cake Mix Mississippi Mud Cookies
Easy to make, soft chocolate cookies topped with fluffy marshmallow frosting, rich chocolate icing and walnuts!
Ingredients
Soft Chocolate Cookies
- 1 box Devil's Food Cake Mix I prefer Pillsbury because they don't flatten out when baking
- 2 eggs
- 1/3 cup oil
- Marshmallow Frosting
- 1/2 cup unsalted butter softened
- 1/4 tsp. salt
- 1 7- oz jar Marshmallow Creme Fluff
- 1/2 tsp. vanilla extract
- 2-3 cups powdered sugar
Chocolate Icing
- 1/4 cup butter melted
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp. vanilla extract
- 3 Tbsp. milk
- 2 cups powdered sugar
- 1/2 cup chopped walnuts optional
Instructions

COOKIES: Preheat oven to 350 degrees and line cookie sheets with parchment paper. Combine cake mix, eggs and oil in a bowl. The dough will be thick. Make golfball sized dough balls, place on cookie sheets and bake for 7-10 minutes, don’t over-bake! Let cool.

MARSHMALLOW FROSTING: Beat butter, salt, marshmallow creme, vanilla and 2 cups powdered sugar together. Continue to add more powdered sugar to thicken. If it becomes too thick add 2 tablespoons milk! Frost cooled cookies.

CHOCOLATE ICING: In a medium bowl add all ingredients listed and whisk together until smooth. spoon over frosting cookies and top with walnuts if desired! (You can always use sprinkles instead of nuts.)
