The Story:
Stranger danger.
It was a low point. Walking aimlessly around my new neighborhood with plates of cupcakes desperately trying to give them away. They looked so cute too! These and the Pumpkin Spice Latte Cupcakes! But the only thought in my head was “Wow, if this isn’t Stranger Danger I don’t know what is. A random lady walking around with homemade treats…”
I need to make some friends in this new town because I would hate for cupcakes and cookies to go to waste! And I don’t need to eat them all myself.

Pumpkin Pancake Cupcakes
Ingredients
Pumpkin Latte Cupcakes:
- 1 box Pillsbury® Perfectly Pumpkin Cake Mix
- 2 tsp. cinnamon
- 1/2 C. oil
- 3 eggs
- 1/2 C. buttermilk
- 1/2 C. sour cream
- 2 tsp. vanilla extract
Maple Frosting:
- 1 C. butter room temperature
- 2 tsp. vanilla extract
- 1 1/2 tsp. Mapleine or maple extract
- 4-5 C. powdered sugar
Syrup and Pecans for decoration
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix into a small bowl with cinnamon and set aside.

3. In a large bowl, whisk oil, buttermilk, eggs, sour cream and vanilla extract together until smooth.

4. Add cake mix/cinnamon and stir until smooth.

5. Fill cupcake liners 3/4 full and bake for 16-20 minutes or until an inserted knife comes out clean.

6. Let cool.

7. Frosting: Beat butter for 2 minutes. Add vanilla extract and Mapleine and slowly add in powdered sugar until thickened.

9. Pipe frosting onto cupcakes and drizzle with syrup and top with pecans.

How can I make these but in a gluten free version?
Use the recipe linked below the recipe box for a cake mix recipe using a WHITE cake mix, then substitute the white cake mix with a white or yellow gluten free cake mix! If the gluten free cake mix makes 20-24 cupcakes then you’re good to go! If the mix only makes 12 cupcakes, then half the rest of the ingredients in the recipe!
I have the same problem–two dozen cupcakes and who is going to eat them? Hubby is diabetic, daughter gluten free and I am a lifetime weight watcher BUT I do indulge at least once a week. So my neighbors and daughters office have been the lucky recipients. Years ago when my brother retired he took up baking as a hobby and took the stuff to a local nursing home.
P.S.– I just love Mapleine! To this day I make my pancake syrup with it just like my mom did when I was growing up. So now I need a good maple cupcake!

Do you use the liquid buttermilk? Have you ever used the powder kind you mix with water or do you know if it’s just as efficient?
I always use the liquid. Not sure about the powdered stuff because what makes it awesome is the thickness of the milk, but it can’t hurt using! I always tell people who don’t have buttermilk around to just use milk!
