The Story:
One of my favorite things is getting great photos of what I bake. Well oh my, how adorable are these?! I had waited and waited for these straws to arrive in the mail, I got the cute glass jar yesterday in anticipation and the malt balls just put them over the top!

Strawberry Malt Cupcakes
Ingredients
Vanilla Malt Cake:
- 2 3/4 cup flour
- 1 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 1/2 cups malted milk powder
- 1 cup oil
- 3 eggs
- 1 cup sour cream
- 3/4 cup buttermilk
- 1 tablespoon vanilla extract
- 1 cup sugar
- 1/4 cup brown sugar
Strawberry Malt Buttercream:
- 1/2 cup butter softened
- 8 ounces cream cheese softened
- 3-4 cups powdered sugar
- 1/2 cup malted milk powder
- 3-4 large strawberries pureed
- 1 teaspoon vanilla extract
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift together flour, baking soda, baking powder, salt and malted milk powder and set aside.

3. In a large bowl, combine oil, eggs, sour cream, buttermilk and vanilla extract.

4. Add sugar and brown sugar to the oil mixture.

5. Slowly add dry ingredients to wet and stir until fully combined.

6. Fill liners 1/2 way and bake for 18-22 minutes or until and inserted knife comes out clean.

7. Buttercream: Beat butter and cream cheese for 2 minutes. Scrape down bowl as needed. Add powdered sugar and malted milt powder. Slowly add strawberry puree. until the buttercream reaches your desired consistency. Add vanilla extract and let beat.

8. Pipe buttercream onto cooled cupcakes and top with malt balls and colorful straws.
These are so very cute and yummy looking. I just ordered some of those straws from ebay!!!! hoping they might be here before valentine’s day. Would love to make these for my residents at the assisted living facility that I work at. Thanks so much for sharing your talents!!!! hey i am new to baking but simply loved your cupcakes, jus asmall qtn; what exactly is malted milk powder n can i use normal milk powder instead
Malted milk powder can be bought at the grocery store. It has a malt taste, so using regular milk powder is not at all the same. You can omit the powder, but obviously it won’t be a malted recipe.

I made the chocolate cupcake recipe and the strawberry frosting. I made the frosting exactly as the recipe called for, when I added the powdered sugar, it was fine, but as soon as you add the strawberry puree, it turns runny, I had to put almost an entire bag of powdered sugar in it and it still wasn’t like a frosting should be. Any suggestions as to what may have happened to this? The cake was delicious, but the frosting looked nothing like this picture looked?
How do you store these? For how long can they be stored before eating?
I’m having a party on Saturday and will love to make these, but I was unsure if they will be fresh by then.

The frosting can be put in the fridge in a container, leave a few hours for it to thaw out before piping it. The cakes can be frozen or just kept in a tupperware in the kitchen for up to a day or so.

Your recipes sound amazing, however, there’s only myself in my household, and I can’t seem to justify making these recipes when they yield up to 30 cupcakes. Is there anyway you give me an idea of how much would be needed to make 6 or so cupcakes? Thanks for sharing your delicious recipes!!

What type of oil did you use in your cupcakes? I have just tried this recipe and the texture is lovely, however all i can taste is canola oil, which is what i used. also is it possible to use melted butter instead, if so how would it alter them?

yeah, you can use vegetable oil or melted butter!
Quick question: how did you get your frosting so stiff? I followed the directions but my frosting was not thick/stiff at all. Also, I did not think the malt taste came through, did you find it was strong enough?
Add more powdered sugar and make sure to use real butter than has never been melted before

My new book will be out in March! I’ll be sure to post about it plenty 🙂 And yes, just snip the straws the right size and just stick them in! They shouldn’t get soggy or anything, I’ve never had an issue with it.
