Lemon Cupcakes with Honey Almond Cream Cheese Frosting

The Story:
            Have you even been to Noah’s Bagels (or Einstein’s or Manhattan’s Bagels depending on where you are in the country,) and had their honey almond schmear?  Well I have.  And it is a beautiful thing.  To have that on a warm chocolate chip bagel is really just like having a cake, but I can sort of pretend that it’s an actual meal. 
            So when my brother asked for lemon cupcakes for his birthday dinner, I thought a honey almond frosting would work quite well.  Or maybe I just needed an excuse to make this recipe, who knows.
            The lemon cake recipe is from Leigh Anne at Your Homebased Mom and they are amazing as well.

Lemon Cupcakes with Honey Almond Cream Cheese Frosting

1 box lemon cake mix
1 cup sour cream
¾ cup water
¾ cup oil
4 eggs
1 small box lemon pudding mix (instant)
Honey Almond Cream Cheese Frosting:
8 oz cream cheese
1 stick butter, softened
¼ cup honey
½ tsp almond extract
2-3 cups powdered sugar

1.     Cakes: Mix all dry ingredients.
2.    Mix all wet ingredients in a separate bowl.
3.    Combine wet and dry and use an electric mixer to beat for about 2 minutes.  The batter should be thick..
4.    Bake at 350 degrees for 25-30 minutes or until a toothpick comes out clean.  Be sure not to over bake.
5.    Let cool.
6.   Frosting: Whip cream cheese, butter and honey until light and fluffy. 
7.    Add almond extract. Add as much powdered sugar as desired.  Then let it beat for a few minutes to make the frosting really light.  (You may need to refrigerate the frosting until it’s still enough to pipe.)
*When using the water you can also use part milk.

I usually email them to myself but I'd love to be able to print with a pretty picture all on one page. Maybe I'm just missing it. Thank you again!     I've made other recipes of yours, and they've all turned out great! This was another yummy one, but their tops sunk in, and I know I didn't underbake any suggestions?!

    Amber- These ones have never sunk on me before, but it is probably one of two reasons. 1: you over-beat your eggs or 2:you live at high altitude, so add 1/4 cup flour to your batter. I hope that helps!

    I just got mine at the grocery store, I am sorry you are having a hard time finding it. Call ahead to your grocery stores and find out which one has it, good luck!

    I’m a novice baker (I love to cook, but rarely follow recipes and baking tends to be more rigid w/ the measurements, etc), but I’ve been dabbling in it lately. I made these tonight, they were my first ever cupcakes. Everything came together very nicely, the recipe was clear and easy to follow. The tops did sink in (and my attempts at piping the frosting to look professional was hilariously bad), but they tasted so unbelievably good. Thanks for posting it, I will definitely make them again.

    I live in California…is this consider a high altitud? should I add the extra flour? I being having this problem with some cupcake recipes as well. Thanks

    Never mind on my question…California is on a 2900ft and high altitude is between 3500-6500ft so…I think I am overdoing my eggs. 🙁

      California us not high altitude, but you can add the flour and give it a try.

      I like to add my strawberry flavoring in… but you can use the cake mix (substitute buttermilk for water and add 3/4 cup sour cream) and top them with a cream cheese or a chocolate frosting!
