I am a fellow Pinterest lover. And a little while ago, this cute cookie dough dip went viral. It always showed up in photos with things like apples and crackers. Well I thought if it worked as a dip, why not as a cupcake? So this cupcake is almost heathy, right? An apple a day…
Apple Cookie Dough Cupcakes
Ingredients
Apple Cake:
- 1 box White or Yellow Cake Mix
- 2 teaspoons cinnamon or apple pie spice
- 1 teaspoon baking powder
- 2 cups peeled cored and chopped apples (I used Granny Smith)
- 1 1/2 teaspoons lemon juice
- 1/3 cup oil
- 3 eggs
- 3/4 cup buttermilk
- 3/4 cup sour cream
- 2 teaspoons vanilla extract
Cookie Dough Frosting:
- 3/4 cup butter softened
- 4 ounces cream cheese softened
- 1/2 cup brown sugar
- 1 cup flour
- 1/2 teaspoons salt
- 2 teaspoons vanilla extract
- 3-4 cups powdered sugar
- milk if needed
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix, cinnamon and baking powder into a bowl and set aside.

3. Prepare apples and place in a separate bowl with lemon juice.

4. In a large bowl, gently whisk oil, eggs, buttermilk, sour cream and vanilla extract together.

5. Add cake mix and stir until smooth.

6. Fold in apple pieces.

7. Fill cupcake liners 3/4 full and bake for 15-20 minutes, or until and inserted knife comes out clean.

8. Cookie Dough Frosting: Beat butter, cream cheese and brown sugar for 2 minutes. In a separate bowl, sift flour and salt together. Add flour mixture to butter mixture. Add vanilla extract and slowly add powdered sugar until you reach your desired consistency. If the mixture seems too thick, add 1 tablespoon of milk and continue to beat. Use more milk if needed, but this will be a thicker frosting than normal.

9. Pipe buttercream onto cooled cupcakes and top with chocolate chips and slices of apple. Note: dip your apple slices in lemon juice to keep them from browning.

The ingredients? If you are asking what the difference is, the yellow cake mix is a little more rich because of powdered eggs.

What’s the purpose of the sour cream? I attempted to make the chocolate lemon cupcake and found that the cake itself had the texture of an Angel Food cake. I’d like to make these but don’t want to encounter the same problem.

Love seeing your fab twists on recipes, being from the UK we don’t have the yellow cake mixes and others so I have to just make a normal cake batter but it seems to work ok!
Can I ask though how many times you have to try these recipes before you get them right? Does it result in you having to throw loads of bad cakes away?

I do a lot of research before I bake and because baking is all about chemistry mess ups shouldn’t ever happen if the proportions are right. So no, I really don’t ever have to throw batter or cupcakes away.

I am going to make an apple cupcake with caramel buttercream frosting with chopped nuts on top (kind of like a caramel apple in the fall time). Do you think white or yellow mix would be better or worse than using a spiced cake mix?

A lot of people really like yellow cake mix, so I would say use that and adda bunch of spices to give it the same kick as a spiced cake mix. Then you get the best of both!
