Strawberry Lime Cupcakes

The Story:

I have been on summer break for about a month now, wahoo!  And these cuties just scream summer.  I would love to eat one of these on a beach somewhere, but I am stuck in Oregon where it will probably stay cloudy until mid June.

Aren’t these cupcake wrappers adorable?  They are nice little touch for a party (I took these to a bridal shower).  You don’t need fancy liners anymore, just a few of these wrappers to put around your cakes.  I got mine from Cupcake Liners Wrappers and these ones I got sparkle a little bit in the light 🙂  Oh how I love pink things…[end-story]

Strawberry Lime Cupcakes

Yield: 24 Cupcakes

Strawberry Lime Cupcakes


Lime Cake:
1 box white cake mix
4 egg whites
1/3 cup oil
1/2 cup buttermilk
1/4 cup lime juice
1/2 cup sour cream
Zest of 4 limes
Strawberry Buttercream:
1 cup butter, softened
2 teaspoons vanilla extract
3 teaspoons strawberry gelatin (Jello powder)
4-5 cups powdered sugar


1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl and set aside.
3. Combine all other cake ingredients until smooth,.
4. Add cake mix and stir well.
5. Fill cupcake liners 3/4 full and bake for 17-23 minutes, or until and inserted knife comes out clean.
6. Strawberry Buttercream: Beat butter for two minutes. Add vanilla extract and strawberry gelatin (you can use fresh strawberries as a substitute). Slowly add powdered sugar until you reach your desired consistency.
7. Pipe buttercream onto cooled cupcakes and top with a fresh lime slice.

    I love pink color, too. A little cake is in a little cup. This IS a cupcake, literally. Oregon will get warmer this weekend. You are out of school so early. I still have five to six weeks left to go. I can’t wait to done with school and start summer baking.

    Would love to see how the Wilton 2D can do that type of swirl. Really pretty. What did you sprinkle on the cupcake? Very pretty and love your website.

      I used pink sanding sugar on the frosting. To make this swirl, pipe slowly but with plenty of force from your hand, it causes the frosting to sort of curl over itself when it comes out.

    hmm, mine came out rather dense…and some of the cakes didn’t cook all the way through.. I have better success with the mixes that start from a box of cake mix! so…Im modifying these for a bakesale tomorrow 🙂 Raising money for Making Strides Against Breast Cancer and I will be selling my (your) Strawberry Lime cupcakes on a hot Florida day!!! Im modifying another recipe to blend with this one and get the same cakes but with a better result hopefully!

    If you use fresh strawberries in the icing, do you strain them first to get the seeds out or just smash them up and throw them in the mixer? And how many, just to desired consistency?

      You can use strawberry seeds, you don’t notice them in frosting. Just use as much as needed. some berries are bigger and some ave more liquid in them, so it’s hard to give a specific number.

        I made a half batch with jello powder and a half batch with real strawberries (i liked the real strawberries my hubs like the jello powder) I ran the berries through a food meal, definitely didn’t notice the seeds in the icing. It was good! I may reduce the crushed berries on the stove next time to reduce the liquid. I had to add more sugar to offset the liquid from the berries. Love the specks of strawberry in the icing! Love the lime cupcakes! Love the lime strawberry combo! Thank you so much for sharing your recipe(s)!

    To make “buttermilk”, use 1/4c vinegar, and add enough milk to equal 1c. Let it set for about 5 minutes before using. (You will notice it start to “curdle”).
