Butterfinger Cookie

The Story:

Halloween is all about costumes and candy.  Kids spend all night dressed-up going door to door, parents sneak chocolate from their children’s bags, single adults snack on the treats they’re supposed to give to the kids and the entire cycle continues until it’s all gone or we’re all just too sick.

Not that you need another reason to steal the kids’ candy.  But you can tell them you are doing THEM a favor.  You’re going to make these cookies for THEM.  Not you…. 🙂

Butterfinger Cookies

Ingredients
  

  • 8 Tbsp. butter
  • 6 Tbsp. peanut butter creamy (crunchy will work though)
  • 2 C. flour
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 3/4 C. brown sugar packed
  • 1/2 C. sugar
  • 1 egg + 1 egg yolk
  • 2 tsp. vanilla extract
  • 1/2 C. mini chocolate chips
  • 8-10 mini Butterfingers roughly chopped

Instructions
 

  • 1. Preheat oven to 325 degrees and line cookie sheets with parchment paper.
  • 2. In a microwave proof bowl. melt butter and peanut butter together. Stir until smooth and then set in the fridge (or freezer for a shorter period of time) to let cool.
  • 3. In a large bowl, combine flour, baking soda and salt together.
  • 4. In the bowl of a stand mixer, beat your peanut butter/butter with brown sugar and sugar for 2 minutes.
  • 5. Add in the egg and egg yolk and vanilla extract and mix until smooth. Scrape down the sides of the bowl as needed.
  • 6. On slow, blend in the flour/baking soda/salt. Don't over mix.
  • 7. Stir in chocolate chips and Butterfingers .
  • 8. Form dough balls about the size of a golf ball and bake for 9-11 minutes. Careful not to over bake!

As always, my favorite cookie scoop.  I literally bring it in my purse on the airplane because I refuse to ever be caught in a kitchen without it.  I can never go back to the 2-spoon method, too long and too messy.

  1. Yum! Butterfingers are definitely on my top-10 list of favorite candy bars! Question: What’s the significance of the “1 egg plus 1 egg yolk”? Does adding the other egg yolk really make that much difference?

  8. Got another question? Exactly how much do butterfinger candy measure out to , I was wondering
    if I can use a big candy bar.

  9. I would probably use about 2 or 2 1/2 regular sized Butterfingers! Just mix it in a little at a time, as long as the dough still sticks together then you’re fine. You can also leave out the chocolate chips and add in more Butterfinger.

  10. How many did you out in the oven at a time? I never know how much to put and when to take them out because cookies always seem undercooked 🙁

  11. If they seem undercooked bake them a few minutes longer! It can depend on what rack your put them on too. I baked about 10 or 8 at a time. I just don’t like to crowd my pan because I need them all to be picture perfect 🙂

  12. I made these for Thanksgiving and everyone LOVED them! I’m wondering if you could make a recipe for Reese’s Cookies next time.. Thinking of making some for a little boy for Christmas who just loves Reese’s. Or could I just replace the Butterfingers with Reese’s.. Please let me know!

  13. Yes! Or you can just make chocolate cookies and push in some Reese’s Pieces to the dough balls before they bake!
