Pumpkin Chocolate Chip Muffins


2 ½ cups flour
1 ½ cup sugar

¾ teaspoon baking powder

¾ teaspoon baking soda
¾ teaspoon salt 
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
3 eggs
¼ cup brown sugar
½ can pumpkin (14 ½ oz)
½ cup applesauce
1 ½ cup chocolate chips

1.     Preheat oven to 350 degrees.
2.    Sift together flour, sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. 
3.    In a separate bowl, whisk eggs and brown sugar together.  Add pumpkin and applesauce. 
4.    Mix dry and wet ingredients together on until just combined.  Fold in chocolate chips.
5.    Spoon batter into muffin liners or greased muffin tins.  Bake for 20-27 minutes.

    yum these look SO good!!! i tried making pumpkin muffins before….didn’t go so well. but this looks like a pretty fool-proof recipe! 😉

    Making these for a wedding reception – when you say 1/2 can pumpkin, I’m assuming 14 1/2 oz equals that 1/2 cup?


    Also making Snickerdoodle and Cherry Cobbler Muffins – it’s a breakfast reception after a late afternoon wedding.
