Nutella Cupcakes II

The Story:
         When I first made my Nutella Cupcakes a few months ago, they were such a huge hit.  I decided I would make them again using a vanilla based cake.  A lot of people don’t even put buttercream on these babies because the Nutella baked into the batter is pretty great by itself, but once you try Nutella Buttercream, you will never say no to it.

Nutella Cakes:“>

Nutella Cakes:
2/3 cup butter, softened
¾ cup sugar
3 eggs
1 teaspoon vanilla
2 ¼ cup flour
½ teaspoon salt
2 teaspoons baking powder
¾ cup sour cream
½ cup Nutella
Nutella Buttercream:
¾ cup Nutella
¼ cup butter, softened
2-3 cups powdered sugar
1 teaspoon vanilla
3 tablespoons whipping cream
Directions:
1.     Preheat oven to 325 degrees and line muffin tins with cupcake liner (about 24).
2.    Beat butter and sugar until light and fluffy
3.    On slow, add eggs one at a time.  Waiting until each one is fully incorporated before adding the next.
4.    Add vanilla
5.    In a separate bowl, sift together flour and baking powder.
6.   Add ½ of the flour mixture, then add sour cream, then the rest of the flour.  Again, waiting for the flour or sour cream to fully mix in before adding the next.
7.    Fill cupcake liners ¾ full and add a teaspoon (or a heaping teaspoon for you Nutella lovers) on top of the batter and swirl into batter using a toothpick.  (24 teaspoons equals ½ cup Nutella)
8.   Bake for 22-25 minutes, or until an inserted knife comes out clean (minus the warm nutella on the knife).
9.   Nutella Buttercream: Beat Nutella and butter.  Add powdered sugar, vanilla and whipping cream.  Adjust as needed using more powdered to thicken, or more whipping cream to loosen.  (Also, if the batter is too light in color, you can always add some unsweetened cocoa.)
10.Pipe onto cooled cupcakes and use chopped hazelnuts roasted in the oven to top!

    Just finished making these for a French club Christmas party :D They are simply AWESOME and taste really good! :) I didn't pipe the frosting simply because I didn't have the right tool, but nonetheless, they came out brilliantly. Thanks for such an awesome recipe!

She loves it with a passion. So naturally when I had found this recipe over a month ago, I bookmarked it to make for her special day.     Emily isn’t crazy about rich recipes, chocolate, or nuts. But she loves nutella. Strange, I know. But she is such a unique soul. So I was excited when I found this recipe with a vanilla base. Most nutella cupcake recipes I came across were heavy on the chocolate and nut garnish side.     This recipe was extremely simple to make. It comes from Lizzy Mae over at her blog, Your Cup of Cake. She is a broadcasting journalism student at BYU and started taking baked goods to her high school when she relocated in those challenging teen years to make new friends. So smart, right?   But my favorite line from her About Page on her blog is this, “I believe that behind every crumb, every slice of pie, every ice cream sundae and behind every cup of cake there is a story”. Isn’t that just plain awesome?     I doubled the recipe to feed Emily’s swim team at Phoenix Swim Club. I made some life long fans tonight and even had a couple of children request to come live at my house. It brings me such joy to bring a little bit of happiness to friends and strangers in the form of a cupcake. And I always end up thinking about my friend, Bud, who encouraged me towards this journey in the first place.
