Chocolate Malt Cupcakes



The Story:   Alright, everyone is wanting some Valentines recipes. I didn’t want to just dye some vanilla cake pink and make it all girly looking or make red velvet (because I am allergic to red dye), so here is my take on a “cute” cupcake. Chocolate Malt Cupcakes, pretty freaking cute. And with a straw! Who can resist that?

Chocolate Malt Cupcakes

Yield: 24 Cupcakes

Ingredients

Cake:
1 box Devil's Food Cake Mix
3 eggs
1/2 cup oil
3/4 cup buttermilk
1 cup sour cream
1 teaspoon vanilla extract
1/2 cup malted milk powder
Chocolate Malt Buttercream:
1/2 cup butter, softened
8 oz cream cheese, softened
3/4 cup cocoa powder
2-3 cups powdered sugar
1 teaspoon vanilla extract
1/2 cup malted milk powder

Directions

1. Preheat oven to 350 degrees and line pans with 24 cupcake liners.
2. Sift cake mix in to a small bowl and set aside.
3. Combine eggs, oil, buttermilk, sour cream and vanilla extract until smooth.
4. add malted milk powder to cake mix and stir.
5. Combine dry and wet ingredients and mix.
6. Fill cupcake liners 3/4 full and bake for 16-22 minutes, or until a knife comes out clean.
7. Buttercream: Beat butter and cream cheese for 4 minutes and scrape down the bowl as needed. Add cocoa powder, powdered sugar, vanilla extract and malted mix powder. Beat until smooth. If too thick, add a tablespoon of milk. If too thin, add more powdered sugar.
8. Pipe onto cooled cupcakes and decorate with chocolate malt balls and colorful straws.

    Your site is looking great!. I’ve made your cinnamon toast crunch cupcakes.( my hubby and his coworkers loved them!)I will be cooking this years valentine banquet at my church. I have a feeling if I dont make something chocolate for dessert I’m sure there will be people rushing at me with forks and knives. And I cant make any cupcakes with nuts, carrots or coconut since I have guests with allergies. I saw these chocolate covered strawberries at costco(like chocolate covered raisins) and was wondering if they would pair good as a garnish with your chocolate strawberry cream cupcakes. If not, any other suggestions? Thanks :)

    Adorable! Planned to make these this morning for a party, when I realized I didn’t have Devil’s Food Cake Mix. Had already gotten everything started. So I improvised and made “Vanilla Malts”! Used French Vanilla cake mix, and left the cocoa powder out of the frosting. Delicious! Thanks for the super cute idea!

    Since Duncan Hines has reduced their cake mixes all but the Signature Brands would using the Swiss Chocalate mix work for this recipe?

    I have been told that you can substitute applesauce for oil. Have you tried in this recipe (malt cupcakes) and does it affect the taste? Sometimes the oil in recipes can be to much but is necessary to keep the cupcake moist.
