The Story:
I have been on summer break for about a month now, wahoo! And these cuties just scream summer. I would love to eat one of these on a beach somewhere, but I am stuck in Oregon where it will probably stay cloudy until mid June.
Aren’t these cupcake wrappers adorable? They are nice little touch for a party (I took these to a bridal shower). You don’t need fancy liners anymore, just a few of these wrappers to put around your cakes. I got mine from Cupcake Liners Wrappers and these ones I got sparkle a little bit in the light 🙂 Oh how I love pink things…

These are really really lovely Lizzie. I love the nozzle/tip you have used for the buttercream.
Tiffany says
What tip did you use?
Lizzy Mae says
Wilton 2D!

Last minute fix for tip. Gallon zip lock bag. Fold corner twice, but corner tip at an angle. Viola!!!

Thanks for the tip.
I love your recipes. I am having to make the caramel apple cupcakes for a school function tomorrow at the request of one of the dad’s who yelled out during a PTA meeting that I HAD to make them again.
I also decided to try your Strawberry Lime cupcakes as they seemed a bit more springy than caramel apple. This is the first recipe of yours that I have not had a lot of luck with. My tasted very floury and not very limey at all. So I upped the zest by a lot and they still didn’t have that lime kick. Finally I poked holes in the tops with a toothpick and squeezed lime juice right over the tops. YUM! That gave them a nice lime glaze with a kick and it soaked in enough to take the edge off the flour taste. I also added just a little extra jello to the buttercream. It worked out good in the end, but I thought I would post this in case someone else has similar problems. It was most likely my limes. They smelled perfect but I guess they just didn’t have the kick.
On a seperate subject, in the past I have added strawberry soda to cream cheese or buttercream frosting. It is extra sweet but oh so tasty.
Thanks for all the great recipes!

I love pink color, too. A little cake is in a little cup. This IS a cupcake, literally. Oregon will get warmer this weekend. You are out of school so early. I still have five to six weeks left to go. I can’t wait to done with school and start summer baking.

I made these for my sister, mom, and grandmother yesterday for mother’s day (and some extra for my girlfriends) and everyone just LOVED them! Said they were incredible.
Thanks for the recipe!

can I use cake flour?
Lizzy Mae says
Go for it!

I made these for my family the other day. They LOVED them! We dumped sliced, fresh strawberries over the entire cupcake for makeshift sort of strawberry shortcake! 🙂 Thanks!!

Would love to see how the Wilton 2D can do that type of swirl. Really pretty. What did you sprinkle on the cupcake? Very pretty and love your website.
Lizzy Mae Early says
I used pink sanding sugar on the frosting. To make this swirl, pipe slowly but with plenty of force from your hand, it causes the frosting to sort of curl over itself when it comes out.

hmm, mine came out rather dense…and some of the cakes didn’t cook all the way through.. I have better success with the mixes that start from a box of cake mix! so…Im modifying these for a bakesale tomorrow 🙂 Raising money for Making Strides Against Breast Cancer and I will be selling my (your) Strawberry Lime cupcakes on a hot Florida day!!! Im modifying another recipe to blend with this one and get the same cakes but with a better result hopefully!
I made your Hostess cakes for my family over the Memorial Day weekend and they were a HUGE hit 🙂 their hips are still cursing me 😉
YAY!

If you use fresh strawberries in the icing, do you strain them first to get the seeds out or just smash them up and throw them in the mixer? And how many, just to desired consistency?
Lizzy Mae Early says
You can use strawberry seeds, you don’t notice them in frosting. Just use as much as needed. some berries are bigger and some ave more liquid in them, so it’s hard to give a specific number.
melinda says
I made a half batch with jello powder and a half batch with real strawberries (i liked the real strawberries my hubs like the jello powder) I ran the berries through a food meal, definitely didn’t notice the seeds in the icing. It was good! I may reduce the crushed berries on the stove next time to reduce the liquid. I had to add more sugar to offset the liquid from the berries. Love the specks of strawberry in the icing! Love the lime cupcakes! Love the lime strawberry combo! Thank you so much for sharing your recipe(s)!

Can you use regular milk if I don’t have buttermilk?
Lizzy Mae Early says
Yes you can, it’s just not as thick so it won’t quite be as moist.
Hannah says
Thanks for the reply! Trying tonight!
Sweetlos says
To make “buttermilk”, use 1/4c vinegar, and add enough milk to equal 1c. Let it set for about 5 minutes before using. (You will notice it start to “curdle”).
Kennedy says
If i were to make mini cupcakes of the strawberry lime, would there be any degree or time change?
Lizzy Mae Early says
less time, about 8-14 minutes
Heather says
Has anyone tried these with cherry instead of strawberry? Cherry limeade sounds awesome!
Valerie Estrada says
Lizzy, do you think I can replace the lime juice with margarita mix to make a non alcoholic margarita cupcake?
Lizzy Mae Early says
Yeah, sounds fun!
