Continuing on with my dating/boy crazy/Valentine’s theme…

The Story:

I gave him the best flirty eyes I could manage but I don’t think I could cover up the fact that my face was turning beet red.  I asked him the basic questions: “What’s your name?” “Where are you from?” “What are you studying?”

But I already knew all the answers.

Whoops.

I facebook-stalked him before I had even met him.  How creepy am I?

But really, how can you blame me?  So much information about the gorgeous blonde boy was just one click away!

Hopefully I’ll never have to admit any of this to him…

Chocolate Cake Batter Cupcakes

Yield: 20 cupcakes

Chocolate Cake Batter Cupcakes

Ingredients

Chocolate Cupcakes:
1 Box Devil's Food Cake Mix
3 eggs
1/2 C. melted butter, slightly cooled (or oil)
1 C. buttermilk or milk
2/3 C. sour cream or plain yogurt
2 tsp. vanilla extract
Cake Batter Frosting:
1 C. butter, softened
1/3 C. yellow cake mix (dry), sifted to remove lumps
2 tsp. vanilla extract
2 Tbsp. milk
3-4 C. powered sugar
Sprinkles and Cherries for decoration

Directions

1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl and set aside.
3. In a large bowl, combine eggs, butter, buttermilk, sour cream and vanilla extract and whisk until smooth.
4. Add cake mix and stir.
5. Fill cupcake liners 3/4 full and bake for 15-21 minutes or until an inserted knife comes out clean.
6. Let cool.
7. Cake Batter Frosting: Beat butter for 1 minute. Add yellow cake mix, vanilla extract and milk and beat again. Slowly add in powdered sugar until you reach your desired consistency. Taste, if you want a stronger cake batter taste, add in more yellow cake mix.
8. Pipe into cooled cupcakes and top with sprinkles and cherries!

    Hi, I’m in Australia, I think our boxed cake mixes are a different size to the US could you specify a weight when you use one, thanks, luv your recipes

    Hi Lizzy! Can I ask what type of camera lense you’re using? I’m assuming one that has a high aperture? New to taking photographs with a DSL-R camera and trying to pick up whatever tips I can! I just have an 18-55 mm lens right now.

      I lot yes, I have cake mix recipes incase you want to replace them with scratch ingredients but I love using the mixes because its easy and gluten free people can just use a GF cake mix!

    Hi!! I was wondering if I could use the buttercream for your cake batter cupcakes which uses cream cheese in it for these? Everyone raves about that one. I wasn’t sure if there was a difference. I am making these to reward my students for a great test improvement they made. I bribed them… :)

    I made this tonight for some cupcakes I have to do for a friend’s baby shower this Saturday. I love adding cake batter to any sweet treat and this was a nice surprising addition to the average buttercream. it was a nice texture and a nice sweet addition to an already great type of frosting and I will make this again to top my cupcakes with thank you very much for the recipe

    Does the dry cake mix make the frosting gritty at all? Have been wondering because I am doing cake batter cupcakes for a wedding next year, and am going to be doing a taste test for the people ordering.
