Fall is in full swing so it’s time to bust out that slow cooker for cozy and easy meals like this Sweet Pulled Pork 3 Ways! Pulled Pork Sliders, Pulled Pork Salad and Pulled Pork Bites that are perfect for game day! I partnered up with Lipton Iced Tea to bring this twist on a classic BBQ meal to you!

Slow cooker meals are my jam.  Set it and forget.  And when you make a meat in a slow cooker, the ways you can use it are endless!  So if you have picky eaters, then make a batch of protein in the cooker and then serve it different ways.  Or make a big pot and use it differently throughout the week!

The first way I’m using the sweet pulled pork is to make sliders.  I picked up some brioche dinner rolls from the store, put on my meat and there you go! Serve with a side of potatoes, salad or veggies and you’re done!

You can also make a simple slaw to put on the sliders if you want to give them a little crunch!

Slow cooker meals are easy, but do you know what else is so easy to make?  Lipton Iced Tea Cold Brew! You don’t have to boil water and let it cool down to make your iced tea anymore!  Just put 2 tea bags into 8 cups of cool water, let cold brew for 5 minutes stirring frequently, remove bags, add ice and serve! Sweeten it up with sugar and serve with a lemon wedge if you really want to jazz it up!  It pairs so well with all of my pulled pork recipes!

I was shocked by how amazing these little pulled pork bites turned out.  They’re so simple, just the sweet pulled pork on the buttery crackers but it melts in your mouth and it’s like heaven.  You can top them with a slice of jalapeño for a kick or a drizzle of ranch dressing to give in a creamy component.  Warning though, if you serve these at a game day party no one will be paying attention to the game anymore.  They’re that good.  I also love this way of serving the pork because you can really stretch the meat and serve a big crowd.  And nothing is better than bringing a huge crown together to cheer on your team!

Sweet Pulled Pork Bites for game day!

Sweet Pulled Pork Salad! If you haven’t tried this, you need to.  It’s served over a warm tortilla and the juices from the meat soak into it and mix with the creamy tomatillo cilantro dressing and creates an explosion of flavor.

I used romain lettuce, tomatoes, black beans and sweet pulled pork to make my salad.  You can also add in corn and scoops of sour cream and guacamole!

Creamy Tomatillo Cilantro Dressing:

1 packet ranch dressing mix

3/4 cup sour cream

3/4 cup milk or buttermilk

2/3 cup cilantro

1 jalapeno, remove seeds

2 tsp, lime juice

3 tomatillos

1 clove garlic

Just zip all the ingredients in a blender to combine!

Sweet Pulled Pork 3 Ways!

Ingredients
  

  • 2-3 lbs. boneless pork carnitas or shoulder
  • 1 12 oz. can Coke
  • 1/4 C. brown sugar
  • 1 10 oz. can enchilada sauce
  • 2 cloves garlic minced
  • 1 small can diced green chilies
  • 3/4 C. brown sugar

Instructions
 

  • 1. Place pork, coke and 1/4 C, brown sugar in a large plastic bag or bowl and marinade for at least 3 hours or over night.
  • 2. Place pork and coke/brown sugar marinade into your crock pot and cook on low for 8 hours or high for 4 hours.
  • 3. Remove meat and shred. Discard liquid
  • 4. Put enchilada sauce, garlic, green chiles and brown sugar in the crock pot and stir. Add in shredded meat and stir again.
  • 5. Cover and let cook for 30-60 more minutes
  • I served mine on rolls with a cabbage tossed in vinegar (a quick slaw). The meat is perfect for burritos or tacos or even a salad!
