Chocolate Peanut Butter Brownies Bites, because everyone loves brownies but we all wish they were just a little prettier. Well here they are! A cake mix brownie cookie topped with peanut butter frosting, chocolate peanut butter ganache and mini peanut butter cups!

Peanut Butter Brownie Bites
Ingredients
Brownie Cookies:
- 1 Box Devil's Food Cake mix I like pillsbury
- 2 eggs
- 1/3 C. oil
- 1 Tbsp. brown sugar
Peanut Butter Frosting:
- 1/2 C. butter
- 1/2 C. peanut butter smooth
- 2 tsp. vanilla extract
- 2-4 Tbsp. milk
- 2-3 C. powdered sugar
Peanut Butter Chocolate Ganache:
- 3/4 C. chocolate chips
- 1/2 C. peanut butter smooth
Peanut butter cups, chopped (I used the mini ones from Trader Joe's)
Instructions

1. Preheat oven to 350 degrees and line pans with parchment paper.

2. Sift cake mix into a large bowl to remove lumps.

3. Add eggs, oil and brown sugar and stir until smooth. Batter will be thick.

4. Scoop walnut sized dough balls onto cookie sheets and gently press them down to make them a little flatter. (Cake mix cookies can sometimes bake up tall and not spread out like normal cookies.)

5. Bake for 6-8 minutes depending on how fudgey you want them to be.

6. Let cool.

7. Peanut Butter Frosting: Beat butter and peanut butter together. Add vanilla extract and 2 Tablespoons milk. Slowly add in powdered sugar until you reach your desired consistency. Add more milk if it becomes too thick.

8. Peanut Butter Chocolate Ganache: Place chocolate chips and peanut butter in a microwave proof bowl and heat in the microwave (about 1 minute). Stir until smooth.

9. To assemble: Frost cookies. I used a large circle tip in a piping bag to pipe out a little circle and then I used a spoon to flatten the frosting out and create a sort of "well" to hold the ganache. Put a spoonful of ganache on each frosting cookie and then top with chopped peanut butter cups!

Just made these last night and they are awesome! However, my cookie became a flat 2 1/2 – 3″ one. I used a small scoop the size of a walnut and just barely flattened them before baking. They ran into each other, so I had to separate them with a spatula. Any ideas? Next time I will leave them in the ball state to see if that does it. Even despite my larger flat cookie, the taste is divine!
Try using Pillsbury mixes, those are what I use!
Okay, I will try that. I usually buy Duncan Hines because they have more dry mix in the box. Should I switch totally to Pillsbury to get the best results from your recipes (which I love and use every week)? For whatever reason, I just thought more mix would be better…..but I am still learning!! Thanks for your thoughts on this and I just received your new book and am so excited to try everything! Give the Pillsbury a shot and see if you like it better! I just prefer the texture of Pillsbury 🙂

Hi Lizzy! Do you have a suggested substitute for parchment paper? I’ve heard of using brown paper bags, but I’m not sure if it’s safe. I’m afraid if I don’t use anything the cookies will brown too fast. If I opt out, just greasing the cookie sheet, should I adjust the baking time/temperature? Thanks for your help!
YOu can just bake them on the cook sheet! But you really should try the parchment paper! I re-use the sheets over and over again so its an AWESOME bang for your buck 🙂
