Rich chocolate cakes topped with fluffy peanut butter frosting, chocolate ganache and fresh banana slices. What could be more perfect? Well… these Chocolate Banana Cake Batter Cupcakes were pretty incredible actually. And if you’re craving banana bread instead of a cupcake, I have THE BEST Banana Bread Recipe.

Someone likened me unto a banana the other day.
“You’re getting older and maybe not looking as good, but really you’re becoming much better and more ‘flavorful.’ Those young bananas are cute and pretty, but everyone would much rather eat an older one. You’re a banana, Lizzy!”

Chocolate Banana Peanut Butter Cupcakes
Ingredients
Chocolate Banana Cake:
- 1 box devil's food cake mix
- 1/2 C. oil
- 3 eggs
- 1 1/4 C. RIPE banana's mashed about 2 bananas
- 1/2 C. sour cream or plain yogurt
- 2 tsp. vanilla extract
Peanut Butter Frosting:
- 3/4 C. butter softened
- 1/2 C. peanut butter creamy
- 1/4 C. milk
- 2 tsp. vanilla extract
- 3-4 C. powdered sugar
Chocolate Ganache:
- 1 C. chocolate chips
- 1/4 C plus 1 Tbsp. heavy whipping cream
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix into a small bowl and set aside.

3. In a large bowl, combine oil, eggs, bananas, sour cream and vanilla extract until smooth.

4. Stir in cake mix.

5. Fill cupcake liners 3/4 full and bake for 16-20 minutes or until an inserted knife comes out clean.

6. Let cool.

7. Peanut Butter Frosting: Beat butter and peanut butter together for 2 minutes. Add milk, vanilla extract and 2 cups powdered sugar. Beat, then scrape down sides of the bowl. Continue to slowly add more powdered sugar until you reach your desired consistency. If it becomes thick like cookie dough, add more milk!

8. Chocolate Ganache: Place chocolate and cream in a microwave proof bowl and heat until melted, then stir unit smooth. (About 1 minute in the microwave…)

9. Pipe Peanut Butter Frosting onto cooled cupcakes, spoon over ganache (let it cool a little before using so you don't melt the frosting) then top with sprinkles and fresh banana slices!

For some reason, cake mixes are hard to find here in Manila. I have a devil’s food cake recipe. Can I jusr add mashed bananas to make the cupcakes?
Replace part of the liquid (usually it’s milk) with mashed banana!
Have you tried with other cake mixes, say yellow or spice cake? This sounds AMAZING, but my odd fiance isn’t a chocolate fan (crazy, I know!)
