The Story:
A few weeks ago I made cupcake for Pink Ballerina Party. Let’s just say, this 5-year-old girl was the cutest thing I had ever seen. When she saw the cupcakes she exclaimed “PRETTY!” And attacked me with a hug. Precious.
So obviously, her cupcakes needed to be all pink.
Pink Confetti Cupcakes
Ingredients
Cake:
- 3/4 cup butter softened
- 1 1/2 cups sugar
- 4 egg whites
- 3/4 cup buttermilk
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 3 cups flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup pink jimmies
Strawberry Buttercream:
- 1/2 cup butter softened
- 8 oz cream cheese softened
- 3 tablespoons strawberry puree
- 1 tablespoon strawberry gelatin
- 1 teaspoon vanilla extract
- 4-5 cups powdered sugar
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Beat butter and sugar for 3 minutes, scrape bowl as needed.

3. Add egg whites one at a time on low until fully incorporated.

4. In a separate bowl, sift flour, baking powder, baking soda and salt together.

5. Alternate adding buttermilk and the dry ingredients to the butter/sugar mixture.

6. Mix in sour cream.

7. Fold in jimmies and fill liners 3/4 full.

8. Bake for 16-22 minutes, or until and inserted knife comes out clean.

9. Buttercream: Beat butter and cream cheese. Add strawberry puree, gelatin and vanilla extract. Slowly add powdered sugar until you reach your desired consistency.

10. Pipe buttercream onto cooled cupcakes.

Those look amazing! Where can you get strawberry puree? Did you blend fresh strawberries or use jam?

Because strawberries are not in season right now, I used frozen berries. I let them thaw, drained off the water from the melted ice, and then threw them into the blender. If you plan to use a piping tip other than a basic circle, make sure you strain your puree to remove any seeds that could clog the tip. Good luck!

Yes, this can easily be converted to a cake mix recipe!
1 box white cake mix
4 egg whites
1/4 cup oil
3/4 cup buttermilk
3/4 cup sour cream
2 teaspoons vanilla extract
1/2 cup jimmies (whatever color you want)
Combine every thing BUT the cake mix gently with a whisk. Then sift in your cake mix, stir, fill liners 3/4 full and bake for 15-20 minutes (or untie a knife comes our clean) at 350 degrees!

Jimmies are a type of sprinkle. I also topped these cupcakes with Jimmies. You can get multi colored Jimmies at any grocery store and even Hobby Lobby! Good luck!

Can cake flour be an equal substitute for flour?
I saw a comment above where you could just use Milk for this recipe, would it replace both the buttermilk & sour cream ? so use 1 c of milk??

Cake flour, yes! Milk would just substitute the buttermilk. Sour cream CAN be omitted but it adds a lot of moisture, so add a little extra milk to substitute.

What difference would cake flour make over all-purpose flour? And would heart shaped sprinkles work?

I JUST made these cupcakes for a little girl’s sixth birthday – second batch is literally in the oven right now – and I’m thinking I must have done something wrong. The batter was very thick – concerningly so – and tasted a little gummy, floury, and none too sweet. Though I was not confident, I went forward and baked them anyway. The resulting cupcakes taste, feel, and look like plain muffins. I consider myself a pretty darn good baker and I don’t think I made any mistakes based on the instructions (apart from actually adding the vanilla, since the instructions made no mention of it)…any guidance!? Thanks 🙂
