Do you buy the pre-shredded carrots? I usually buy baby carrots but don't want to lose a finger 🙂 I may just get the big ones and shred myself, but thought if it would save time I may go for the pre-shredded if you recommend them 🙂

I buy the big ones and shred them myself. I made a carrot birthday cake tonight actually… I figure it's my workout that earns me an extra cupcake or muffin 🙂

Made these today and they are absolutely great.. The combination of all the flavors, let alone the textures is explosive!! Can you tell I love them?? I also use your idea of the souffle cups instead of cupcake liners.. I can fit alot more on a cookie sheet and they hold up so well… Thanks for the tip about putting them in a sealed containor to cool… I have done this for years and it does keep them moist.. Again, I love your site..

Is it 1/2 cup of sugar? Also, is it sweetened or unsweetened coconut?

1/2 cup granulated sugar and 1/2 cup brown sugar. Sweetened coconut!
