Chocolate Sour Cream Frosting

The Story:

When people ask me what I do for work, I sometimes  find it hard to answer.  I feel like no matter what I say, a red flag goes off in their head and sends them (the men) running.

I say: “I’m a professional blogger.”

He hears: “I write about my life and sit around waiting for my hubby to knock on my door.”


I say: “I’m a food photographer”

He hears: “I like to instagram.”


I say: “I own a business.”

He hears: “I’m better than you.”


I say: “I write cookbooks.”

He hears: “I’m a professional taste-tester.”


I say: “I bake cupcakes.”

He hears: “I’m going to make you very fat.”


I say: “It’s complicated.”

He hears: “I’m unemployed.”

Chocolate Strawberry Cupcakes

Chocolate Strawberry Cupcakes


Chocolate Strawberry Cake:
1 box devil's food cake mix
3 eggs
1/2 C. oil
1/2 C. Tillamook sour cream
1/3 C. milk
1/2 C. strawberry puree (place berries in a blender and blend)
2 tsp. vanilla extract
Chocolate Sour Cream Frosting:
1 C. butter, softened
2 tsp. vanilla extract
1/2 C. unsweetened cocoa powder
1/2 C. sour cream
3-4 C. powdered sugar
Fresh Strawberries for decoration


1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl to remove any lumps and set aside.
3. In a large bowl, combine eggs, oil, sour cream, milk, strawberry puree, and vanilla extract.
4. Stir in cake mix.
5. Fill cupcake liners 3/4 full and bake for 17-22 minute or until an inserted knife comes out clean.
6. Chocolate Sour Cream Frosting: Beat butter until smooth. Add vanilla extract and cocoa powder and beat again. Add sour cream and 2 cups powdered sugar. Beat and then continue to add in more powdered sugar to reach your desired consistency.
6. Frost cooled cupcakes and top with a fresh strawberry.

Fun Fact: I takes me FOREVER to pick out berries at the store because I need small pretty ones for photos! People around me are always confused and think I’m crazy as I carefully inspect each container.

    I think Judy H has a good idea–hope it works. But in the end, you need a man who hears what you say and doesn’t assume that he has you figured out before he knows you.

    A friend of mine told me years ago that you need to make a list of what, exactly, you want in a man and you will meet him within a year. So a different friend and I sat down with a glass or two of wine (each, of course) and made a list. She met a man that night that she was with for a couple years. I met a man within 2 months–I married him and this year is 20 years married. Doesn’t hurt to try.

    These look delicious!!!! I am LOVING making your recipes using your chocolate cake mix substitute recipe that you posted several months back. That recipe is GENIUS!!! I also made a vanilla version by switching out the cocoa powder for more flour and adding in a tablespoon of pure vanilla when I actually make the cupcakes. Everyone loves them!!!     I smell the containers of strawberries in the store to see which smell the sweetest and aren’t overly ripe. People look at me like I’m a lunatic. Lol These look amazing. I think I’ll make them for valentines day. 🙂

    These cupcakes turned out great! I just made some, but I have extra strawberries to use up, so I’m making my own strawberry frosting instead of using the chocolate sour cream frosting. So happy with the results! Thanks for posting!
