Brownie Batter Cupcake

Is there anything better than brownie batter licked from the bowl?  Maybe not, but these cupcakes sure come close! The cake is a double chocolate cake and the frosting is made with brownie mix.  The flour and salt from the mix keep is from getting too sweet and once it’s topped with some brownie pieces, you won’t be able to help yourself.

The Story:

I woke up, walked into the kitchen and they were gone.


I gave a heartbroken look to my father who was putting on his shoes to head off to work and he laughed and said “I thew them away.”

He threw away my deliciously fudgey brownies? He threw away heaven on Earth? He tossed perfection into the trash? Who was this impostor?

He said, “I saved you from yourself.”

Very true.

Brownie Batter Cupcakes


Easy Chocolate Cake:
1 box Devil's Food Cake Mix
1/2 C. melted butter (or oil)
3 eggs
2 tsp. vanilla extract
3/4 C. milk
1/2 C. sour cream
1 C. mini chocolate chips
Brownie Batter Frosting:
1 C. butter, room temperature
1/2 C. brownie mix, dry (from the box)
1/3 C. unsweetened cocoa powder
2 tsp. vanilla extract
2 Tbsp. milk, more if needed
2-3 C. powdered sugar
Brownie pieces (I took my boxed brownie mix, split it in two, made half the batch for these brownie pieces and use the other half of the mix for my frosting!)


1. Preheat oven to 350 degrees and line pan with cupcake liners.
2. In a large bowl, sift in cake mix.
3. Add melted butter, eggs, vanilla extract, milk and sour cream. Stir until well combined and smooth.
4. Stir in mini chocolate chips.
5 Fill cupcake liners 3/4 full and bake for 15-20 minutes or until an inserted knife comes out clean.
6. Let cool.
7. Brownie Batter Frosting: Beat butter. Add brownie mix, cocoa powder, vanilla and milk and beat again. Slowly add in powdered sugar until you reach your desired consistency. Add more milk if it becomes too thick. Taste as you go, feel free to add more cocoa powder or brown mix to get your desired taste!
8. Pipe onto cooled cupcakes and top with brownie pieces!

You guys, I couldn’t stop eating the brownie bits as I put them on the cupcakes! Brownies are my weakness!!!

    These are delicious!!!! Brownies are perfect with frosting! I finally got your book lizzy! Thanks for your note and signature, I love it! I’ve already tried like 4 recipes in 3 days! My favorite had been your banana bunt cake, i made it gluten free by using your white cake mix substitute recipe. Also i omitted the chocolate chips and chocolate glaze and substituted it with walnuts and your maple glaze topped with more walnuts! It was one of the best things I’ve ever made! Thank you so much!!

    How do you bake half of the brownie mix? Do you just half the ingredients on the box? I would love to know!

      Yup!! I just pour out half the mix (I totally just guess!) and then add in half the ingredients called for on the box and bake it in a smaller pan! I do this ALL the time when I want brownies but don’t want to make the whole pan.

    I like to think that I don’t have an addictive personality for the most part and that willpower and I are not mortal enemies. Brownie batter ruins all of that for me. The minute I start making brownies all of my normal inhibitions go completely out the window and 20 minutes later I’ll find myself with a chocolate-smeared face and a half-empty mixing bowl. Long story short: I really want to make these cupcakes, but I’m terrified about what will happen if I do.

    What a wonderful recipe, we will try it as an afternoon snack for our dieting group on Saturday before the Kentucky derby.

    The cupcake photos are so stunning and clear. Many do not know that Cupcakes can actually be used for weight loss, that’s how we use them.

    I have to rave about this frosting, I’ve been on a baking kick and this has to be my favorite frosting. Usually I bake and try a little for quality but then let everyone else eats them. But this frosting? I could eat the whole batch straight. So yummy!
    I did a combo of Betty Crocker’s Peanut Butter Silk Cake recipe, made into cupcakes with the peanut butter frosting as filling. With this brownie batter frosting on top and brownie pieces? AMAZING.

    I have just made these for dear Hubby. The cupcake size allows for better portion control, but OMG! These are to die for. He’s been hard pressed to stick to one at a time! I kicked it up a notch by digging a little hole in the cupcake and plopping a bit of brownie inside the cupcake, then the frosting and the hunk o’ brownie on top. That took care of the extra brownie bits hanging around and the ‘filing’ emulates the two layer cake he craves. Stumbled upon your site accidentally and absolutely love it.
