Alright, I am totally obsessed with my Perfect Banana Bread, it really is the best classic banana bread! It’s dark and dense and incredible! Just like the stuff from Starbucks. But this new recipe, it’s heavenly too! It’s a lighter version (no brown sugar) and the almond touch makes it seem so fancy 🙂 But really, I am now addicted to two different banana bread recipes. This is trouble.
I really did call my mother the day I made this and told her she had to make it. So… you should be making this too! It won’t disappoint.

The Story:
Security lines at the airport are so weird to me. We wait and wait and wait and then all of a sudden it’s like a race! Hurry! Take off your shoes and belt and empty out your pockets as fast as you possibly can! I always find myself laughing at people who wear lace-up shoes to the airport. Have you never flown before? Those just slow you down. C’mon. Get serious about your flying apparel. It’s all about the yoga pants and sandals.
But this last time, the TSA worker gave me the most bizarre look as my purse went through the X-ray machine. He pulled my bag off the conveyer belt and reached in and pulled out a plastic bag. He said “Do you want me to throw these away for you?” I replied, “Of course not!”
He thought I was insane.
“They make great banana bread,” I said with a smile.
He put the plastic bag back in my purse and I caught the next flight to Houston with my purse full of ripe bananas. I couldn’t leave them at home! They would be no good by the time I got back! So I took them with me 🙂 It’s a great carry-on item, it’s not a weapon, liquid, or dangerous–just dangerously delicious.

Almond Banana Bread
Ingredients
- 1/2 C. butter room temperature
- 2 C. sugar
- 2 eggs
- 1 C. milk
- 2 tsp. vanilla extract
- 2 tsp. almond extract
- 3 C. flour
- 1 tsp. baking soda
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3 bananas mashed
- 1/2 C. sliced almonds optional
- extra sugar for sprinkling optional
Instructions

1. Preheat oven to 350 degrees and prep two large loaf pans by greasing. I like to also lien mine with parchment paper to easily remove my bread.

2. Beat butter and sugar until creamy.

3. Add eggs, milk, vanilla and almond extract and stir until combined.

4. In a separate bowl. combine flour, baking soda, baking powder and salt.

5. Add dry ingredients to wet slowly. Follow immediately by adding mashed bananas. Mix just until combined.

6. Pour into prepared pans.

7. Sprinkle a layer of sliced almonds on top and lightly sprinkles some sugar on top. This adds extra texture and makes the bread really beautiful, but it's totally optional!

8. Bake for 40-60 minutes or until an inserted knife comes out clean.

9. Let cool in pans and then remove and serve!
The almonds on top really add an elegant touch.. plus they’re delicious!

Before it went in the oven. I like to bake my bread with parchment going off the sides, that way when it’s cooled, I can just lift up on the parchment to get the loaf out easily. It’s not necessary though, most people don’t have to take photos of their bread 🙂

I hade this the other day and substituted the almond extract for crushed almonds and added some white chocolate chips and oh my goodness it was amazing!

Made this tonight! Didn’t have almond extract so just used almond milk in place of the milk…yum! 🙂
I did this recipe and it turned out awesome! I used half granulated sugar and half coconut sugar, half white flour and half almond flour (I made myself from the pulp of my almond milk), and half whole milk half homemade almond milk along with blueberries, and it turned out delicious! Both cakes were gone in two days! I have this in my repeat stack….I am definitely going to use this again. And with the substitutions it still held a delectable taste and texture! Thx so much for the simplicity without losing the taste!
Loved this recipe, the bread turned out so delicious! I only slightly modified the recipe in which when I was ready to add the wet and dry ingredients to the creamed butter, I alternated adding in the dry mixture very slowly and the milk, making sure to end with adding the dry ingredients. It made for a great consistency and crumbly banana bread. YUM! Thank you for this wonderful recipe!

I made this banana bread with my granddaughter. It is truly delicious. All the family and friends I have it to have raved about it. The almond flavoring gives it a different flavor twist but without overwhelming the banana flavor. Thanks for this new treat

Not sure what i did wrong but it’s been in the oven for over 2hrs and it still isn’t done. Dripped over the edge like crazy. I’ve never had banana bread do this to me before. My oven is working fine
Just checking what kind of sugar you used? I put in caster, as you didn’t specify.. Hoping it wasn’t brown like my traditional banana bread recipe.

Exceptional recipe for banana bread. The use of almond extract plus the decorative almonds/sugar on the top make for a wonderful gift loaf as well as home use. I now prefer this to my regular recipe for banana bread…I cut the sugar back to 1 1/2 cups and I think I could cut it back a bit further to let the banana and almond flavors come through.
I wish you would have shown the picture of how to place the parchment first instead of last.
I read through this recipe several times. I am not seeing any bananas! Is it just me?
Really didn’t enjoy it, the texture and flavour were both not quite right. I think the amount of sugar is too much and throws it all off. Won’t be remaking.

I didn’t believe it, but this really is the best banana bread I’ve ever eaten. So moist, and the mix of almond and banana is delicious. I did add some chopped dried dates, but otherwise made it just as the recipe says. Thank you for a fabulous recipe!

It was just a bit too sweet so I might cut back to 1 3/4 cup sugar. My bananas were also very ripe and sweet so that might’ve been the reason.

What size loaf pans are you using?
I believe based on the video, she used a 9” x 5” loaf pan.
Halved the sugar as per the comments as ripe bananas have plenty of natural sugar on their own. Only had a 2lb loaf tin but came out perfect after 50 mins. Will make again if I have any more leftover bananas!!
I cooked the Banana Almond bread today but I didn’t have 2 loaf pans so I cooked it in my Bundt Pan. It looks really nice.
I love it and I don’t even really like banana bread. Everyone I have made it for has loved it as well.
This turned out amazing! I sprinkled it with cinnamon before I baked it and ate it warm. The crust was sweet and crunchy. Added this recipe to my favorites.
