The Story:
My obsession with coconut and chocolate has returned! But this time chocolate is bringing his best friend, Nutella.

Coconut Nutella Cupcakes
Ingredients
Cake:
- 1 box chocolate or Devil's Food cake mix
- 3 eggs
- 1/2 cup oil
- 1 cup sour cream
- 1/2 cup milk
- 1 tsp. vanilla extract
Nutella Ganache:
- 2/3 cup nutella
- 1/3 cup chocolate chips
Coconut Cream:
- 8 oz cream cheese. softened
- 1/2 cup butter softened
- 1 1/2 tsp coconut extract
- 3-4 cups powdered sugar
Shredded Coconut
Instructions

1. Preheat oven to 350 degrees and line pans with cupcake liners.

2. Sift cake mix into a small bowl and set aside.

3. Combine all other ingredients in a large bowl.

4. Stir in cake mix until smooth.

5. Fill cupcake liners 3/4 full and bake for 17-22 minutes or until an inserted knife comes out clean.

6. Nutella Ganache: On the stove top or in the microwave, melt Nutella and chocolate chips until smooth.

7. Once cupcakes have cooled, dip the tops of your cupcakes into the ganache and let it firm up, this may take a little longer than normal ganache.

8. Coconut Cream: Beat cream cheese and butter. Add coconut extract and slowly add powdered sugar until smooth. If it becomes too thick, add 1 tablespoon milk.

9. Pipe coconut cream over firm ganache.

10. Roll in shredded coconut for decoration.

I used an Ateco #809 tip, but all you need is any round tip (a sort of large one) an then you roll it in coconut and thats what makes it perfectly round!

Hi! I know you posted this Recipie a few months ago, but I was wondering if you used sweetened coconut or unsweetened for the topping. I was unsure if the sweetened would be too much with the nutella ganache and the coconut cream? They look amazing!

I used milk, but semi-sweet is wonderful as well!

Lizzy, I have problems again… the first 2 times I made the buttercream it came out perfect, however, yesterday I made your lemon cupcake and I had lumps in the buttercream, tried twice and both times it was the same so I gave up and made it with cream cheese and double cream instead which was sill a big hit.
Today I tried again, this time, I was making the coconut nutella cupcase and I used the stirrer instead of the whisk, but the buttercream was the same – I had lumps again… sooo fustrating!!!
Please help me where I went wrong… Thanks!!!
Okay, what are the lumps It is butter? cream cheese? Powdered sugar? Make sure you beat your butter (and cream cheese if it’s in the recipe) for 2 minutes before. This smooths it out. But they should be at room temperature anyway.
Hi Lizzy, it was butter… the more I beat it the lumpier it gets… will try to make sure the butter is room temperature next time… maybe that was the problem. Thanks for your help. Your cupcakes (again!!!) were a big hit at work!!!!
Yes, butter needs to be soft or else you will always get lumps! Sometimes I cheat and will zap it in the microwave, but you really have to be careful if you do that because if the butter melts, it’s all over 🙂
