Story:
Waking up to the rain is bitter sweet. It makes me miss Oregon and all my memories from under the clouds and pine trees, but it also makes it quite hard to leave my cozy covers.
So instead of making some fancy filled cupcake, I stuck with some classic Rice Crispy Treats but jazzed them up a bit.
Oreo Rice Crispy Treats
Ingredients
Marshmallow Treats:
- 1 bag miniature marshmallows 12 oz bag
- 3 Tbsp. butter
- 1 tsp vanilla extract
- 5-6 C. rice puff cereal
- 23 Oreos roughly chopped
White and Dark Chocolate to drizzle
Instructions

1. Prepare an 8X13 inch pan by greasing it with butter or use foil to line the pan.

2. In a large, microwave proof bowl, place marshmallows, butter and vanilla extract.

3. Heat for 1 minute in the microwave, stir and then continue microwaving and stirring in 20 seconds intervals until smooth.

4. Add rice cereal (more if you like it crunchier and less if you like it chewier) and stir until well coated.

5. Fold in chopped Oreos.

6. Dump into prepared pan and pat down with buttered hands to fit pan.

7. Drizzle with melted white and dark chocolate for decoration.

How do you melt your chocolate so it can be thin enough to drizzle? Every time I melt chocolate (whether over a double boiler or in the microwave), it is either too “glumpy”, or I cook it too much and it ruins the chocolate.

Use chocolate melts! I melt them in the microwave and they are always great and easy. I get mine in bargain bins. But just microwave for like 30 seconds and stir and 10 more seconds and then stir until good and smooth. But it will depend a little on your microwave

Can you use marshmallow creme?? I had a jar so I thought I’d buy the ingredients to make rice krispies but I’ve read that they don’t set well and that they aren’t as gooey 🙁 I really don’t want to go buy a bag of marshmallows because I want to use the creme up but I need to make these treats for a party so I want them to be good! :/

give it a shot. You may have to use extra cereal though because yet, they won’t set like normal, but I cant imagine them being bad.

It makes a normal 9X13 pan, so it will just depend on how big or small you cut the pieces! 20-30
