Whenever I see cinnamon sugar, I tend to laugh at myself a little bit. When I was 10 years old, I remember being in the kitchen on a Saturday morning and making myself a piece of cinnamon sugar toast. But our little glass jar of cinnamon sugar was empty. I promptly walked down the long hallway to my brother in the TV room and asked, “Paul, how do you make cinnamon sugar?” And he said, “Think about it.”

YUM!
Haha great story.
These look so good though – I love cinnamon toast crunch!!
My boyfriend would die for these. That's his favorite cereal, even as a 28-year old.
These look fabulous. Great idea! Thanks for sharing.
Yum! I love cinnamon and sugar combos! I know you've mentioned that you make all your cupcakes the morning of an event- when you have quite a large number, do you put the one's you've already frosted in the fridge, or just leave it out. If you do put them in the fridge, does condensation develop on the frosting at all? Just curious
YUM! question though – the cereal for the cupcake batter, is that 1 cup before or after crushing?
Joy- If I have a big order to fill, I bake all of the cupcakes and seal them in tupperware when they are done and then I decorate all of the cupcakes at the same time on location of the event. No fridge required
ItsSimplyComplicated- 1 cup in the batter after crushing! Good luck!
This looks amazing, I can`t wait to try it out. Thank you!Jesshttp://creativelymediated.blogspot.com/
What a great recipe! Your cupcakes look so delicious!!! Thanks for sharing.
I made these a couple of days ago and brought them into work. I got a lot of compliments on them, they were a hit! Thanks!!!I was thinking about making a "Take 5" cupcake. I saw a couple of recipes online, but was curious how you would make it? Love your recipes and blog!
Hm, I LOVE Take 5's, maybe I will have to make that next week. Though that is a tricky candy bar to recreate, I will need to do some research.
My hubby's favorite cereal is this flavor and he would be blown away at this fabulous recipe! I am SO making these.Love your story. "Think about it." HA!
Ok, so this is probably a silly question, but for the vanilla cake mix, do you mix the cake mix before adding it to the mixture or do you just add the powdered mixture. I don't bake very often, but would love to make these for my husbands birthday this weekend.
Courtney, I am a little confused by your question. But if you are asking if you mix the cake mix by the directions on the back of the box first, the answer is no. Just use the cake mix powder as an ingredient. Good luck!
Thank you so much for posting these! I found them on Pinterest and made them for my family gathering this past weekend and everyone went crazy over them!! They were fantastic!
i'm 19 and i just made these for my boyfriend/family and they just about died. love them!
Good! I am so happy they are turning out so well for everyone!
wow. amazing…came here from pinterest and I am not leaving. From one cupcake lover to another, you rock.
This is probably a stupid question, but do you use a whole box of cake mix?
I make cupcakes a lot and I don't know what happened but whereever the cereal was within the cupcake was kinda tough. So mine aren't very good. Any ideas?
Sounds delicious!
Tried making these, TURNED OUT GREAT!
My boyfriend is getting so anxious about getting older, so for his birthday I am doing a "back to childhood" theme in the little things I'm planning… this works out so great! Thank you!!!! BTW-one of his favorite cereals!
Do you use a whole box of cake mix?
Yes, the whole box of cake mix! But only use the ingredients I have listed, don't add what the box calls for
do these need to be refridgerated? i just made some!
I also encountered tough cereal pieces inside, almost like soggy chewy pieces…. anyway to prevent this?
I would love to make these for my mom's 60th birthday party however I'm a little afraid after reading that some people have gotten tough cereal pieces inside…. do you have any idea why it would turn out that way? could the cereal pieces be too big?
Sandra, yes I think people have been leaving the pieces much too big. If you are really nervous, you could leave them out or make a simple crumble with them to top the cupcakes as they bake. Good luck!
If there is no vanilla cake available…what would be the best option?
Use a white cake mix. But follow the egg quantity on the back of the box. It may call for only egg whites. You can do that, or substitute 2 egg whites for 1 whole egg.
Where can you get Vanilla cake mix?
You can also use a white cake mix. But instead of using 4 egg whites, use two eggs whites and one full egg. I get my vanilla cake mix from Winco. Only some grocery stores carry vanilla mix.
My mixer is broken so making the icing will be an issue…any suggestions on a flavor to get and just add the cereal to?
If you are buying frosting, just get a basic vanilla and mix the finely crushed cereal into that. Good luck!
This is awesome! I'm so excited to try it. Cinnamon Toast Crunch has always been my favorite cereal. I like your story about how to make cinnamon sugar.
My niece called it "toast and dirt," because she had no idea what her mom was doing to her toast, but she loved it, and it looked like dirt!
These were the best cupcakes I've ever made, thanks so much for the recipe. They were the perfect addition to my daughter's Sweet Sixteen "Breakfast Club" themed party.
These look amazing! I cant wait to make them. Do you beat the batter or just fold by hand?
With cake mix recipes, I always mix by hand using a spatula.
Any way to substitute the buttermilk? Im allergic and I really want to try this… :’(
Just use regular milk, or really any liquid. If you get desperate, you can use water.
I usually do not have buttermilk on hand, but I always have low-fat yogurt in the fridge. It’s an equal substitution and I use it in all recipes that call for buttermilk.
I just made these (still have the second tray in the oven), and they are AMAZING. Thank you so much for posting this recipe!
Love this! My family is going to bake a batch for our pre-Oscar coffee mixer this weekend! I’ll use gold foil liners and top with golden disco dust…Talk about Oscar GOLD!!!
Thanks so much for the recipe!
Hello!!
Looks amazing!! Im not a big cream cheese fan, is there anything I can substitute the cream cheese with in the frosting?
Yes, you can replace 8 oz cream cheese with 1/2 cup soft butter!
My kids loved these!! They are super rich. I could barely finish one. Ha ha
I found this recipe on Pinterest. I love your website. We will be taking these to a school carnival for the cake walk. When I drop them off the night before the event will it be an issue if they do not refrigerate them since the frosting has a lot of dairy?
No, they will be totally fine! If you refrigerate them, the buttercream will be rock solid, so don’t do that
I LOVED cake walks when I was younger!
These are great! I made them for my daughter’s class for her birthday. Part of the batch was made into mini-cupcakes which were a perfect bite of Cinnamon Toast Crunch.
What size cake pan would you use for this batter if you didn’t want to do cupcakes? And how long would you bake them for? I need to make a bunch of cakes and cupcakes are more work to transport..
Also is this enough icing to cover the entire cake or would it need more.. I can’t wait to try this for my mom’s 60th birthday next weekend.
Thanks!!!
Kerry
Two regular 9 inch pans would work just fine. They will bake a little longer, probably about 20-25 minutes, But just check them with a toothpick or a knife because every oven is different. The icing amount should be good for a cake! You can do some fun decorating with the cereal around the sides of the cake
Happy Birthday to your mother!
The 2nd half of the recipe calls for 1 teaspoon vanilla is this vanilla extract?? Thanks I can’t wait to make these tonight!!!
Yes, one teaspoon vanilla extract!
THANK YOU!!! My husband and I LOVE them!!! We don’t know if we want to share them!!
What size cake mix do you use? I know there are usually two different sizes and I didn’t want to use a big box if I should use the smaller one.
I use boxes that are 18.25 ounces!
Made these tonight and they are delicious.I used my food processor to crush the cereal and it was a powder in no time..looked much like brown sugar..my son tried one and he likes them. Not sure how many will make it till morning. What is left I will be taking to work for morning coffee break and share them with the girls I work with.I better take the recipe with. This is a recipe that will be made again and again…mmmmmmm.
These are delicious…I made them and took them to work for our coffee break snack and shared them with the girls I work with..it was a hit.Didn’t know how many would have made it as my son,the night before, was wanting to eat them on me.Now I have more to make…one dozen for my son to take to work and 2 dozen for my husband to take to his friends at work.Looks like I will be having a ‘cupcake’ weekend.
These look so good! I think I am going to make these for my fiancé’s birthday. I will probably make them the night before serving them, so do they have to be refrigerated overnight since the frosting has cream cheese in it?
Nope, they should be fine! But I would suggest not frosting them until morning, of else the frosting will get hard on the outside.
These cupcakes were so good and so moist! I didn’t even make the buttercream frosting because by the time I was ready to frost them, half of them had already been eaten. SO good!
Sooo I made these cupcakes last night and omg, they came out amazing. Very simple to make as long as you can follow directions. Me & my roommate have been totally demolishing them — so delicious. Also, I didn’t exactly get the cereal down to a fine dust, nor did I sift it before putting it in the icing, but we liked the semi-crunchy icing. I also added a few tablespoons of buttermilk to the icing — came out great.
I rarely use boxed cake mixes and I was wondering you have ever used a homemade mix to make these? I wanted to make them this evening but I would prefer to use the ingredients i have on hand rather than go back to the store
Thanks!
Juts use any vanilla cake recipe and add some cinnamon to it!
My favorite cereal!!! MUST. MAKE.
