The Story:
         Whenever I see cinnamon sugar, I tend to laugh at myself a little bit.  When I was 10 years old, I remember being in the kitchen on a Saturday morning and making myself a piece of cinnamon sugar toast.  But our little glass jar of cinnamon sugar was empty.  I promptly walked down the long hallway to my brother in the TV room and asked, “Paul, how do you make cinnamon sugar?”  And he said, “Think about it.” [end-story]

Cinnamon Toast Crunch Cupcakes

Yield: 24 cupcakes

Cinnamon Toast Crunch Cupcakes

Ingredients

Cinnamon Cake:
3 eggs
1/3 cup oil
¾ cup buttermilk
1 teaspoon vanilla extract
¾ cup sour cream
Vanilla Cake Mix (not white cake mix)
1 ½ teaspoon cinnamon
(There used to be cereal pieces in the batter, but that has been removed due to comments saying it's better without it)
Cinnamon Toast Crunch Buttercream:
8 oz cream cheese, softened
½ cup butter, softened
1 teaspoon vanilla
3 cups powdered sugar
2/3 cup Cinnamon Toast Crunch powder
(Crush the cereal in a bag and then sift out 2/3 cup)

Directions

1. Preheat oven to 350 degrees and line pans with 20-22 cupcake liners.
2. In a large bowl, gently combine eggs, oil, buttermilk and vanilla.
3. Mix in sour cream.
4. Add cake mix and cinnamon and mix until smooth.
5. Stir in lightly crushed cereal.
6. Fill cupcake liners ¾ full and bake for 15-18 minutes, or until an inserted knife comes out clean.
7. Buttercream: Beat cream cheese and butter until fluffy. Add Cinnamon Toast Crunch powder. Add vanilla and powdered sugar. Adjust the consistency using milk if it is too thick.
8. Pipe onto cooled cupcakes and top with cinnamon sugar and Cinnamon Toast Crunch squares.

    Yum! I love cinnamon and sugar combos! I know you've mentioned that you make all your cupcakes the morning of an event- when you have quite a large number, do you put the one's you've already frosted in the fridge, or just leave it out. If you do put them in the fridge, does condensation develop on the frosting at all? Just curious :)

    Joy- If I have a big order to fill, I bake all of the cupcakes and seal them in tupperware when they are done and then I decorate all of the cupcakes at the same time on location of the event. No fridge required :)

    Ok, so this is probably a silly question, but for the vanilla cake mix, do you mix the cake mix before adding it to the mixture or do you just add the powdered mixture. I don't bake very often, but would love to make these for my husbands birthday this weekend.

    Courtney, I am a little confused by your question. But if you are asking if you mix the cake mix by the directions on the back of the box first, the answer is no. Just use the cake mix powder as an ingredient. Good luck!

    I would love to make these for my mom's 60th birthday party however I'm a little afraid after reading that some people have gotten tough cereal pieces inside…. do you have any idea why it would turn out that way? could the cereal pieces be too big?

    Sandra, yes I think people have been leaving the pieces much too big. If you are really nervous, you could leave them out or make a simple crumble with them to top the cupcakes as they bake. Good luck!

    Use a white cake mix. But follow the egg quantity on the back of the box. It may call for only egg whites. You can do that, or substitute 2 egg whites for 1 whole egg.

    You can also use a white cake mix. But instead of using 4 egg whites, use two eggs whites and one full egg. I get my vanilla cake mix from Winco. Only some grocery stores carry vanilla mix.

    If you are buying frosting, just get a basic vanilla and mix the finely crushed cereal into that. Good luck!

      No, they will be totally fine! If you refrigerate them, the buttercream will be rock solid, so don’t do that :) I LOVED cake walks when I was younger!

      Two regular 9 inch pans would work just fine. They will bake a little longer, probably about 20-25 minutes, But just check them with a toothpick or a knife because every oven is different. The icing amount should be good for a cake! You can do some fun decorating with the cereal around the sides of the cake :) Happy Birthday to your mother!

    Made these tonight and they are delicious.I used my food processor to crush the cereal and it was a powder in no time..looked much like brown sugar..my son tried one and he likes them.Not sure how many will make it till morning.What is left I will be taking to work for morning coffee break and share them with the girls I work with.I better take the recipe with.This is a recipe that will be made again and again…mmmmmmm.

    Sooo I made these cupcakes last night and omg, they came out amazing. Very simple to make as long as you can follow directions. Me & my roommate have been totally demolishing them — so delicious. Also, I didn’t exactly get the cereal down to a fine dust, nor did I sift it before putting it in the icing, but we liked the semi-crunchy icing. I also added a few tablespoons of buttermilk to the icing — came out great.

    These are AMAZING!!! The only suggestion i have is NOT to put the little piece of cereal on until right before you serve them, they get soggy if you do it too early.       Sifting the cake mix first removed the lumps and clumps that can make for dry pockets in a baked cake. And combining the liquid ingredients together first also help with the texture of the cake. If you combine everything at once it’s easy to over the eggs as well.

    For anyone that loves Cinnamon Toast Crunch, there is a liquor out now called Rumchata, that tastes just like it. Comes in a white bottle. Tastes excellent on the rocks and could probably even be incorporated into the recipe some how.
