Strawberry Coconut Cupcakes

The Story:

As an official 23-year-old I thought I was all grown up and too good for sunscreen.  Yes, me and my ghostly pale skin.  So there I was on the beaches of San Diego basking in the sunlight with no protection.  A light breeze, the surfer boys running by in their wetsuits and the sounds of the volleyball game 50 yards away filled the air.  3 hours later… I was a little pink, but I felt okay.  Then after a stroll through the mall I caught a my reflection in a Nordstrom mirror.

Strawberry Colada Cupcakes


Coconut Cake:
1 box white cake mix
3 eggs
1/3 Cup oil
1 C. coconut milk
1/3 C. sour cream
1 tsp vanilla extract
2 tsp. coconut extract
Strawberry Buttercream:
1 C. butter, softened
4-5 C. powdered sugar
2-3 tbsp. strawberry jam or preserve
1 tsp. vanilla extract
Shredded Coconut


1. Preheat your oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl and set aside.
3. In a large bowl combine eggs, oils, coconut milk, sour cream, vanilla extract and coconut extract.
4. Add cake mix and stir until smooth.
5. Fill cupcake liners 3/4 full and bake for 17-22 minutes or until an inserted knife comes out clean.
6. Buttercream: Beat butter for 2 minutes. Add in powdered sugar until thick. Add strawberry jam 1 tablespoon at a time until you reach the right flavoring. Taste to test 🙂 Mix in vanilla extract.
7. Pipe buttercream onto cooled cupcakes.
8. Place shredded coconut into a bowl and roll frosted cupcakes into it to smother with coconut.

    Lovely cupcakes as always! Love your blog, Lizzy. Please protect your skin always sweetie. My daughter was just diagnosed with melanoma at age 20. Melanoma is on the rise in young adults and this cancer is not joke; it has been a very scary experience. She had to drop everything and come home from college for surgery.     Even though I cannot eat dairy, I always go to your recipes when I need to take something for dessert. Everyone always enjoys them very much! I love the pictures, they are beautiful. I also enjoy your posts along with the recipes. I do hope you will use sunscreen, in the long run you will be thankful you did.

    Lizzy, Lizzy, Lizzy! WHAT were you thinking??? You MUST wear sunscreen EVERY TIME you go out into the sun! I am 62 and have no wrinkles while my SUN GODDESS twin sister looks like my grandmother. Remember that the next time you go without sunscreen!!! Just saying……!

    You make the best cupcakes! I’ve been following your blog for a while now and when you mentioned you were sunburned I had to write…please be careful. I am 55 and spent many summers literally frying myself at the beach as a teen. I’ve had two basal cell skin cancers removed and I’m lucky that’s all it’s been. The sun also ages the skin terribly and you are just too pretty to let that happen. Don’t bake your skin – just bake cupcakes!!!!

I bought a can to make these cupcakes and it didn’t smell like coconut or taste like coconut at all. It actually tasted spoiled, maybe. Thanks for a great blog!!!

      I use different brands just depending on what is at the store that I go to that day. The Chaokoh brand is good but I seem to stay away from the Thai brands. I don’t know why, I just think thai and cupcakes don’t match haha
