Your Husband’s New Favorite Pasta Salad
My husband Parker loves buffalo anything. He’s always getting buffalo hot wings, shaking buffalo sauce on his dinner and always trying to convince me to try it each time. I have never been much of a fan. I love spicy things but for some reason I just never really loved the buffalo flavor, maybe it’s because when I tasted wings they were just so drenched in the sauce! But guess what, this recipe was actually my idea and I loved this pasta salad! There isn’t too much dressing and the crunch of the celery, creaminess of the blue cheese and snap of the tomatoes is just all a perfect combination. So not only will your husbands and sons fall in love with this Easy Buffalo Chicken Pasta Salad but you and your gal pals will love it too! It’s perfect all summer long and for when football season starts back up as a game day dish.
Fun and Spunky Pasta Salad Dish
When I show up to a party or potluck I want to being something great! Something special that will knock people’s socks off or at least not fade into the big table of dishes. It feels so good when my dishes or desserts are the first to disappear at a party! When everyone is bringing boring pasta dishes, bring this Easy Buffalo Chicken Pasta Salad to really kick up the flavor game! Everyone will be begging for the recipe before the party is over. Not only does it taste amazing but it also looks so fun! The bright orange color just screams “PARTYYYYY!”
Quick and Easy Dinner Idea
I love that all I had to do to make this Easy Buffalo Chicken Pasta Salad was make the pasta, drain it, cook the chicken strips and add in the veggies and dressing. Easy! We used the Foster Farms Buffalo Chicken Strips but as I wrote in the notes you can use any type of chicken or chicken strips. Even some left over rotisserie chicken from Costco will do the trick! Juts chop it up and let the buffalo dressing do the rest. We also like the Frank’s Red Hot Buffalo sauce but you can use whatever buffalo wing sauce or hot sauce you have on hand.
Are you ready for the warm weather? I totally am! My kids are begging to play outside and bust out the water table but the daily high is sometimes only 60. So, not freezing but not quite swimsuit weather–sorry kids.
I used large macaroni noodles for this pasta salad but you can use rotini, penne, anything you have on hand will work great! I like to use pasta noodles that are a similar size to the other ingredients, it makes for east bites and eating.
One bite and you will be hooked!
Easy Buffalo Chicken Pasta
- 1 16 oz. package pasta cooked
- 1 24 oz package buffalo chicken strips cooked according to package instructions
- 1 cup chopped celery
- 1 cup cherry tomatoes halved
- 2 green onions chopped
- 3/4 cup buffalo sauce
- 1/3 cup ranch dressing
- 1/3 cup blue cheese crumbles optional
Once the pasta and chicken are cooled, add into a large bowl with celery, tomatoes and green onions. Whisk together buffalo sauce and ranch dressing in a small bowl and pour half into the pasta, stir and then taste. Continue to add dressing until you like the flavor! (Adults may like more of a kick and kids may prefer a more mild flavor.)
Refrigerate for at least one hour until the pasta salad is cold. Crumble over the blue cheese and serve.
You can use any type of chicken or chicken strips! Even leftover rotisserie chicken, just chop up and let the buffalo sauce add all the flavor!
If you want to add to the recipe, think about adding a little garlic powder, onion powder and/or black pepper.
