I must admit I love shopping. It’s not the act of buying anything, I mean who likes spending money? But I love just looking around and browsing. So I especially love big stores like Target where you can look at electronics, clothes, groceries, and furniture all in the same store.
One night I ended up in the book section with some time to spare. So I pulled out one of Martha Stewart’s baking books and took a seat. Yes, I just sat down in the middle of an aisle in a Target and flipped through a book. Probably a silly sight, but I have no shame when it comes to me and my baking obsession.
I found a recipe for a strawberry buttercream (or maybe it was some other berry). I saw that she used jam to make the berry flavor. I’m sure there were other special things in the recipe, but that was enough information I needed.
Strawberry Buttercream
1/2 cup butter, softened
1/3-1/2 cup strawberry jam or jelly (seedless, or strain it)
2-3 cups powdered sugar
1-2 tablespoons milk or heavy cream if needed
Directions:
1. Beat butter until lightened in color.
2. Strain jam or jelly to make smooth. You will need to push it through with a spoon and be patient!
3. Add jam/jelly to butter and mix well.
4. Add in powdered sugar until you reach the desired taste. You can also add some vanilla extract or milk if you need to.

BeverLee- They are called souffle cups, and yes they can be larger than normal sized cupcakes. I have two sizes, one he regular size and one larger. The larger ones are perfect for muffins!
OH EM GEE! <3 I came across your site on "Stumbled upon it". I LOVE cupcakes and now LOVE your site! I never really tried to make Buttercream….always thought it was too hard…but after reading this, I can make all kinds of buttercream to go with all my cupcakes!
This looks amazing! But the recipe says 1/2 to 1/3 _______ strawberry jam or jelly. Is that supposed to be a cup? Tablespoon? If I guess, I'll get it wrong… 🙂
