How to make THE BEST Strawberry Frosting

I have an entire post on making the best strawberry frosting because time after time I top cupcakes, cookies, cakes with this frosting and people just can’t get enough!  I even made it to top the cupcakes at my own wedding and people were coming up to me asking for the recipe (not congratulating me on getting married haha).  This secret ingredient is something I’ve been using for years and I love it because it means I get to make strawberry frosting without any red dye or artificial color!  That’s right, all that color is all natural! I use freeze dried strawberries to make the magic happen.  I get mine from Trader Joe’s but they are becoming popular so other grocery stories carry their own brands.  If you want a strawberry frosting people will go wild for, this is it!

THE BEST Strawberry Frosting Ever.

Sugar cookie bars are great because after you make the dough you can just dump it all into your pan, press flat, and bake!  So fussing with dough balls or multiple batches going in and out of the oven!

Easy to Make Dessert for a Crowd

Making dessert for a party can be intimidating!  First of all, you have to pick a recipe that feeds at least 15 people, you don’t want to slave away all day in the kitchen, you still want people to be somewhat impressed with your baking abilities, and then you have to transport the dessert to the party! These Strawberry Sugar Cookie Bars solve all your problems.  The recipe is baked in a casserole dish, so you can make 12 BIG pieces or make 24 perfectly sized slices! This recipe has very little fuss and doesn’t take much time to prep.  The strawberry frosting alone will have everyone cheering your name by the end of the party! And bar desserts are super easy to transport, just cut them in the casserole dish, cover with foil and drive!

Ingredients

Sugar Cookie Bars

  • 1 cup butter, unsalted room temperature
  • 1 cup sugar
  • 1 egg room temperature
  • 1 egg yolk room temperature
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. almond extract
  • 3 cups flour
  • 1 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt

Strawberry Frosting

  • 3/4 cup butter, unsalted room temperature
  • 1 tsp. vanilla extract
  • 3 tsp. fresh lemon juice optional
  • 1 1.2 oz package freeze dried strawberries finely crushed
  • 2-3 cups powdered sugar

Instructions

  • Preheat oven to 350 degrees and line a 9X13 inch casserole dish with parchment paper and lightly grease the sides of the pan. (I use parchment paper to easily lift my cookie bars out after they have cooled.)
  • Using a stand mixer, beat butter and sugar for 3 minutes. Scrape down the sides of the bowl as needed.
  • Add egg, egg yolk, vanilla and almond extract. Mix again. (To get room temperature eggs fast, place eggs in a bowl of warm-hot water for a few minutes.)
  • In a separate bowl whisk together flour, baking powder, baking soda and salt.
  • Slowly add in dry ingredients to wet and mix only until combined. Dump into prepared pan and press flat.
  • Bake for 16-20 minutes. The edges will just barely start to turn golden, then take them out and place the pan on a cooking rack!
  • FROSTING: Beat butter, vanilla, lemon juice (optional), crushed freeze dried strawberries and 1 cup powdered sugar. Continue to add powdered sugar until you like the sweetness level, the frosting should still be soft enough to easily spread on your bars with a knife. If it gets too thick, add milk or more lemon juice.
  • Once your bars have cooled, lift up on the parchment paper to remove the entire thing from the pan. Frost and top with fresh strawberries.  If you want to add sprinkles add them immediately after frosting to make sure they stick! Enjoy!

The perfect recipe for a Spring potluck! As I started making these bars, I discothat I didn’t have any almond extract. I substituted coconut extract and it was a great substitute! It balanced perfectly with the strawberries and lemon juice.

The cookie part was good. The buttercream had a weird texture with the freeze dried strawberries. And before you ask, yes we pulverized them. Just not quite right.

  4. These were the BEST!! They were a big hit for sure and so fun to try something different like the freeze dried strawberries!! I loved the bar idea to save time but I personally might like them less thick so I will try a bit larger pan soon to see!

To be honest, the frosting was a no go for me. Just had a weird taste and texture and the strawberry flavor didn’t meld well with the almond extract flavor in the dough. Sad they didn’t turn out as I expected
